French Fries - How to make French Fries at home 🍟 🥔 - French fries recipe

French fries:
INGREDIENTS:
Potatoes - 3
Oil - 1 1/2 cups
Salt- 1/2 tsp
Vinegar - 1 Tbsp
Water
Seasoning(garlic powder/paprika)-optional
DIRECTIONS:
1. Peel the potatoes and cut them to 1/4 inch sized uniform pieces, add the cut potatoes immediately to a bowl of cold water to prevent browning and to remove excess starch
2. Now let the potatoes soak on the cold water for 30 minutes, if you do not have time then rinse the potatoes at least thrice in cold water, this step removes the excess starch
3. Now after soaking blanch the potatoes, add water, vinegar and salt to a sauce pan, heat this and once it starts to bubble up simmer for 12 minutes
4. Remove the potatoes from water and pat it dry with kitchen towel or paper towels, remove the excess moisture completely
5. Now we have to double fry them, heat up 1 1/2 cups of oil in a heavy bottomed pan, heat the oil in low flame(300-325 degree F)
6. Fry the potatoes in small batches for 3 to 4 minutes, once you remove the potatoes from oil drain off the excess oil by using paper towels or by placing them on wire racks, let them cool and come to room temperature(you can freeze the excess potatoes at this point and use them when needed)
7. Once the fries are completely cool, flash fry the potatoes on high temperature(375 degree F) for 2 minutes or until they are golden and crispy
8. Remove the fries from oil drain off the excess oil using paper towels immediately sprinkle seasoning or salt(if needed) over them shake it well so it is seasoned(This step is optional)
9. Serve it hot with your favorite seasoning or dips
