Those Gargoyles are just straight damage races. Like all bosses they gain the Enrage status when they reach a certain HP threshold. Enrage is denoted by a shaking orange icon on their name plate. Enrage makes them way more dangerous and that is why their big AoE blaster attack starting whiping out the party later in the fight. The game kind of expects you to have more or less mastered blade and driver combos, stacking orbs and building the chain attack by now. Be aggressive with specials, stack a bunch of orbs, and unleash a chain attack ASAP. If you can do that by the time they enrage you can take them down. Lots of people have trouble with them, and they are meant to be punishing. They are trying to prepare you for the rest of the challenges in the main story.
The level of the party wasn't the problem, I think I beat them with less level. And you fihgt better than me. It had to be a matter of character skills and equipment.
Remember to level up your Drivers! I noticed your auto attacks were doing less than 100 damage, which definitely isn't right for this deep into the game. Fill out their Affinity charts, upgrade Arts, and change equipment as you get better stuff.

Yeah I spent about 15 minutes leveling stuff up after like the 3rd death
