In regards to Van Halen's m&m thing, the band used a lot of equipment that needed to be handled carefully. The contract included specific instructions on how to handle the equipment. If there were brown m&ms that meant the promoter didn't read the contract carefully enough and probably didn't handle the equipment properly.
You got the gist of it, but it's more about their show containing dangerous effects like pyrotechnics and other things that could potentially injure a band member if set up incorrectly. So they needed the stage hands to follow the instructions very closely to minimize risk, so as you said the brown M&Ms were a little trick to see if the intended party had read them properly.

Van Halen's brown M&M thing was to make sure the contract was read thoroughly for safety reasons. "As lead singer David Lee Roth explained in a 2012 interview, the bowl of M&Ms was an indicator of whether the concert promoter had actually read the band's complicated contract. "Van Halen was the first to take 850 par lamp lights - huge lights - around the country, "Roth said. "At the time, it was the biggest production ever." In many cases, the venues were too outdated or inadequately prepared to set up the band's sophisticated stage. "If I came backstage, having been one of the architects of this lighting and staging design, and I saw brown M&Ms on the catering table, then I guarantee the promoter had not read the contract rider, and we would have to do a serious line check" of the entire stage setup, Roth said. "
And for the record a Rider in a contract is clearly labelled"Rider Agreement" in the heading set apart from the main body of the contract and is at the back of the contract. It generally is short..usually less than 10 pages. For someone to neglect to read the last few pages of a contract is just plain negligent. So I am not sure whether Dave was just rationalizing the demands of the band or the venues were that bad at reading..or both.
I read that the only reason Van Halen requested to have the brown M&Ms removed was bc if the saw them in the bowl, they knew that the venue staff didn't read the bands contract.
