my favorite way to do this is to key mash, quantize to 1/4, and delete anything that doesn't complete a chord, and then spread the notes so it has a bit more of a human sound, then humanize and randomize velocity.
once you have a completely random chord progression, add notes between them however you like. transpose wherever you want and boom you have yourself a whole melody
