Using a sharper stiffer knife like your butcher knife is better than the flimsy knife included in the box. I prefer to use scimitar like curved butcher knife at least 9" long. It is stiff enough and has plenty of belly to get the thin pieces. I also prefer my Serrano slices dry, so I let it sit for hours exposed. Dry serrano has a more concentrated robust flavor. Lastly I save all of the skin, when I have enough I deep fry it and make the most delicious cracklins!!!
