    Welcome to Kathiyawadi Swad! Today, Bhavnaben Rathod shares a quick and tasty recipe for Cabbage nu Shaak (Patta Gobi Sabzi) 🥬, a unique take on your regular cabbage sabzi. Perfect for a quick, healthy meal in just 5-7 minutes! 😋
    Ingredients :
    1. Oil 🛢️
    2. Mustard seeds (Rai) - ½ tsp 🌰
    3. Cumin seeds (Jeera) - ½ tsp 🌿
    4. Green chili - 1 (sliced) 🌶️
    5. Ginger - 1 piece (sliced)
    6. Garlic - 4 cloves (sliced) 🧄 (optional)
    7. Asafoetida (Hing) - a pinch 🌿
    8. Onion - 1 medium (chopped) 🧅
    9. Cabbage - chopped 🥬
    10. Tomato - 1 medium (chopped) 🍅
    11. Drumstick Powder (Saragva Powder) 🥄 (Recipe here : • સરગવા નો પાઉડર કેમ બન... )
    12. Dry Masala: Red chili powder 🌶️, Turmeric powder 🌕, Coriander powder 🍂
    13. Garam Masala - ½ tsp 🌶️🌿
    Method to Prepare :
    1️⃣ Heat Oil : Start by heating 2 tablespoons of oil in a pan over medium heat. Once the oil is hot, add ½ teaspoon of mustard seeds (rai) and ½ teaspoon of cumin seeds (jeera) . Let them crackle for a few seconds to release their aroma.
    2️⃣ Add Aromatics : Next, add 1 sliced green chili 🌶️ , 1 piece of sliced ginger , and 4 cloves of sliced garlic 🧄 (optional). Sauté until the garlic turns golden brown and fragrant. If you skip garlic, the dish will still taste great!
    3️⃣ Incorporate Hing and Onion : Add a pinch of asafoetida (hing) to enhance the flavors, followed by 1 medium chopped onion 🧅 . Stir and sauté until the onions become soft and translucent, creating the perfect base for the sabzi.
    4️⃣ Add Tomato and Spices : Toss in 1 chopped tomato 🍅 to give the dish a slight tanginess. Cook until the tomato softens. Now, sprinkle 1 teaspoon of red chili powder 🌶️ , ½ teaspoon of turmeric powder 🌕 , For a unique twist, add 1 teaspoon of drumstick powder 🥄 (optional but highly recommended). This adds a delightful earthy flavor to the dish. Stir everything well so the spices mix with the onions and tomatoes, creating a thick masala.
    5️⃣ Add Cabbage : Now, add chopped cabbage 🥬 to the pan. Stir the cabbage with the masala until it’s well coated with the spices. Cabbage will release its own moisture, so there's no need to add extra water.
    6️⃣ Season with Coriander Powder : 1 teaspoon of coriander powder 🍂 , and ½ teaspoon of garam masala 🌶️ . Stir everything well
    7️⃣ Cook to Perfection : Cover the pan and cook on low-medium heat for 3-4 minutes, stirring occasionally. Ensure the cabbage softens but still retains a slight crunch.
    8️⃣ Serve : Once the cabbage is cooked to your liking, turn off the heat. Serve your flavorful Kathiyawadi Cabbage Sabzi hot with rotli , bhakhri , or as a side dish with dal-rice . Enjoy this quick, healthy meal! 😋
