If so what do you use for a bit? I feel like there must be an accessory bit to do it, but I can't find them, so I am wondering what to call them to search?

Could you hot glue a golf tee upside down to the middle of the top of your cab ??? It might keep your fingers farther from the blade .. Plus I think hot glue can pop off your glass cab ... I would sacrifice production speed for safety ...
So long as there isn't a ton of pressure being applied to the stone and the blade, which is blunt and diamond encrusted, doesn't cut skin. Its important to not press super hard and let the bit do the heavy work.

Hey, Kenneth! I leave the back with the texture from the kiln paper; I used to sand our cabs when I was using kiln wash but I have found I really like the thin fire texture and its a lot less work! It also helps adhesives to hold a little better if I am gluing the cabs on to a setting.

Just to let you know they make a small clamp adjustable made to specifically to hold the stone when grinfing

If your making the cab yourself why not just put the groove in before baking?
