Me too! Started watching Julia in the early 70s and Jacques shortly thereafter. Glad to have a couple of his books also. Any one remember Graham Kerr, the "Galloping Gourmet"? He was my first TV teacher. Have his first book too. Bon appetite
love how casually he talks about the late joel robuchon, one of the greatest french chefs ever to walk the earth. and to be honest, he absolutely can, as he's seen and done it all already. while remaining a down-to-earth, humourous, all-round absolute charm of a man pretty much anyone would love to spend a day (or hundred) in the kitchen with! who at 84 still mashes potatoes by hand like it takes no effort at all!
Jacques makes me feel more confident about doing things like grabbing a bit of butter with my fingers from the butter dish. Like if anyone ever fussed at me for it, I can say “That’s what Jacques Pepin does.”
@Beliko R people have different view points on that. When I worked in the kitchens, I was one of the cleanest cooks and always cleaned up my area rest of the kitchen. There is a way to work clean and fast, even when you are crazy busy. I’ve been in some kitchens where I have seen it at the end of the night and it looked like a bomb went off in it. I called them slobs.
MasterChef Pepin always taught soaking your potatoes for freshess and to release excesss starches bravo to you Master Pepin for your passion for french home cooking
Jacques teaches, entertains, relaxes us, and makes us happy. Must be really nice people that are his fans. Check out all the comments and replies. Not one nasty, snarky, arguing person in the entire group. Huge compliment to this legend.
I agree I grew up watching him and still love how he cooks, he is genuine and not overly scripted and dramatic, he is a real chef and I know cause I used to be one for a long time. His cooking, however not perfect but is beautiful to watch. He Pulls it off like a a real pro in a kitchen, no one can tell unless you were trained, but that does not mean its bad, just shows he is the real deal.
My wife gave me that book in 1999. My favorite is the duck with parsnips. It's a cut up, pan fried duck. This is likened to Southern fried chicken - a bird cooked in its own fat. Memorably good recipe.
have watched you all during your career. first time when you were teaching danny kaye how to cook in the 50s i believe. you were a hansom black haired boy....a fine cook even then. and i thank you for all those years.----betty
I absolutely adore Jaques. Always watched him when possible. I loved when he cooked with Julia Child on occasion. Remember how he was very frugal and would use limp veggies for soups ? He would say, "Don't waste anything." He's the best.
Sir Jacques, incase you are reading this. I just want you to know how much I adore your cooking! ❤️ You always inspire me to do better and serve a great meal. Thank you for sharing your talent and art of cooking. Salute! From Berkeley California.
I love this man so much! Dad used to pile mash in form of a mountain, indent the middle and pour cream into it with parsley and more cracked pepper. Oh man, it was indulgent heaven.😍😍
I was so happy to see that Jacques has a RUclips channel! I learned my knife skills and much more watching him as a kid! He’s still a great teacher. Proper technique without being preachy or arrogant. Class.
Jacques! You are the man! You take something so simple, and keep it simple but make it so exquisite at the same time. Watching you and Julia Child cook together was one of my most joyous moments as a chef.
Don't forget Jaques has been the personal chef of a French president. He has created menus ande cpoked dinners for world leaders in France. He has worked in the world's best restaurants. Yet he shows us how to cook simple dishes.
You are a classic Jacques I love you thank you for all the years you taught me to be a good home cook every guest I ever served loves my cooking . I am a happy cook happy cooking.
Absolutely love watching and listening to him! I grew up watching him and Julia together on every Saturday on pbs. The way he teaches is so soothing and almost healing. I just play his videos even just to hear him talk. Thank you for being who you are, Jacque. Much respect and love from Japan. xoxo
Always delicious food and even with something so simple, flavor options. Never claims that there's only one way. One of the best teaching chefs of all time.
I couldnt make toast without burning it before I discovered this fine fellow... he has my gratitude - - I remember as a a young kid in my Grandma's house she always used to put a small piece of coal in a pot of water that had peeled potatoes in to keep them from going manky
I can’t wait to try the golden mound potatoes. Thank you- just today, I made your au gratin potatoes- they are very good every time! You are right, garlic in potatoes is perfect.
I love you, you inspired me to cook from a young age! I was shocked to find you living in CT! I live in Moodus CT very near you. I would love to meet you sometime and just shake your hand. Thank you for being a role model in my life when A father was not possible. Not to mention the life skill to feed my family health home cooked great food that I'm proud to say I'm now making for my grandchildren! Hope your feeling better, so glad I found this on youtube.
I've been watching him for I don't how how long. Every time I see him use black pepper, I think of Julia Child getting on his case for not using white pepper. They made a great team. Rest in peace Julia.
Chapeau bas grand chef!
my mom used to use some of the water she boiled the potatoes in too. to make mashed potatoes. she must have gotten it from you. she loved watching you and julia on tv
It's so fascinating how he speaks with this heavy french accent but when he says the word "water" it sounds so distinctly american that it takes a few words for the accent to pick up again. Edit: 1:10 for the segment discussed
@@alibitokbayev3811 neither, what you are picking up on is the result of being immersed in the United States, is actually quite common for people with accents to lose them after a certain period of time. I’m surprised that his accent hasn’t remained because most people who come from another country retain their accent without any change to it or at least any major change once they reach a certain age, it’s more common with younger people to lose their accent than it is with older but it isn’t unheard of.
Very easy and simple way of doing something which you also enjoy...look casual as it is very easy for him just like fish to water... great learning experience 👍👍👍
I'd watch him boil water. He's just that impressive to watch. Such a nice man who loves his family. Very humble.
Imagine this down to Earth humility in a ‘celebrity tv chef’ today? Life rewards those who are true to it. 👍
Hell yeah! I completely agree!
Classic mashed potatoes is probably one of my most favorite dishes on the planet.
I hope he gets to live a thousand years. His cooking is great but for me just how at ease he operates calms me down.
Definitely a huge contrast compared to Ramsey or Marco pierre-white...
He's the Bob Ross of cooking.
1000 years?!
@@colinvannurden3090 Marco is pretty calming to be fair, while I love Ramsey I feel like hes slightly overrated
👍
‘Butter makes it better’ is the motto of the French cuisine xD
I thought it is, "If in doubt just pour red wine in".
and he is still ripped. are we sure the french are the same species of homo sapiens as the rest of us?
@@dougmphilly Europeans move around a lot, I think that's why ^_^
When you go to American restaurants you might be surprised to know there can be a ton of butter in your food.
Quite right too!
This man is a living legend. I am so envious of his knife skills, and he is in his 80's. I learned how to cook watching him and Julia. Just amazing.
Finally a chef, cooking REAL FOOD with such good and healing.
Yup. The dude rocks, and then some! I'm in total agreement with you!
Surprised he is still iving with all that butter
Me too! Started watching Julia in the early 70s and Jacques shortly thereafter. Glad to have a couple of his books also. Any one remember Graham Kerr, the "Galloping Gourmet"? He was my first TV teacher. Have his first book too.

If mashing potatoes by hand takes significant effort, you're either using the wrong potatoes or undercooking them. It really shouldn't be much work.
I love the casual way he prepares food and puts a great dish together without effort-even hand mashing potatoes! ❤️

Those gratin potatoes look amazing
He likes his stuff just like I do. Brown. Almost burnt. Especially English muffins and toast. Anything with cheese like this.
Just a little butter... adds pounds of it. A little cheese. Like a cups. A very big cup. He is the best. I smile every time.

im glad youtube was made to allow elderly chefs to share their recipes
Helped teach me to cook. The Julia & Jacques series is still the best ever. No recipes just great technique. A national treasure. Love him!

Betty, I'm jealous that you have gotten to watch the Chef for so long. Bless you.
I love that if you watch the truly great chefs, they're far less precious about things than the internet would have you believe.
I will be watching an hour a day if this now! I would listen to any book he narrated
This is so simple but yet, it has a tremendous flavor...a classic for our files and memories! Love this man!
Jacques is the Man..He explains things so simply & concisely..Economy of info, apart from the important stuff.
1 clove, 2 cloves, 5 cloves, a whole head. . .
Yessir! Happy Cooking Sir!
84 years old and is still the classiest. He is the man
I like your recipes because these are simple to do with less accessories and utensils. Lot of love from India Mr Pepin.
Best and warmest mash potato recipe ever!

It is my pleasure to watch, chef Pépin!
As I often cook for one, I enjoy that so many recipes scale down and still work...
We're still regularly cooking the Salmon with Basil Tomato Sauce that we learned from watching Jacques 20+ years ago
Automatically liking, almost unseen. Jaques knows best. Thank you Jaques. Knoblauchkartoffelbrei, heaven!
I like that he gives you options and one masher is not the best but he "likes" to do it this way. Very good teacher.
I love this man so much! Dad used to pile mash in form of a mountain, indent the middle and pour cream into it with parsley and more cracked pepper. Oh man, it was indulgent heaven.😍😍

Please make more!! I think im watching every video with this legend in it
I was waiting for him to say happy cooking at the end
I don’t think he can, as that was a PBS thing. He should definitely have some other catch phrase to close out the show though.
"And here we are."
Appy cooking, you mean
And to listen how eggs should be cracked 😂 I love this man ❤️
I totally agree!!! No such thing as too much garlic!!! Thanks again, Chef Pepin!
I can’t wait to try the golden mound potatoes. Thank you- just today, I made your au gratin potatoes- they are very good every time! You are right, garlic in potatoes is perfect.

Outta Thyme567 We miss you Jacques!
Axiom Steel26 I know he is but his last PBS series was last year. You’ll see reruns now and then but that’s it.
I feel like I have found gold with this little channel! As always, I'm in awe watching Jacques work!
My HERO greatest cooking legend of all time.
The best of all time and also the classiest
My favourite chef! He is a breath of fresh air compared to these fast and slick narciscistic youtube chefs
It doesn't matter what Jack is teaching. I really enjoy his joi de vivre. He enjoys the food too, sumptuous no matter what he prepares.
I love this man. So calm and relaxed. He cooked with Julia child amd was asked to cook for JF Kenedy
3:39...The beautiful puddle of butter on top running down the potatoes is gangster.

Even hearing him speak evokes amazing flavors.
He is the best.
What a joy watching a master at his craft.
Jacques is just wonderful with the paring knife.
It’s like part of his hand.
I like the idea of the garlic boiling with the potatoes because it will come out soft and easy to infuse when mashing.
I love watching Jacques Pépin, what a brilliant man.
my mom used to use some of the water she boiled the potatoes in too. to make mashed potatoes. she must have gotten it from you. she loved watching you and julia on tv
A Living Legend in the Kitchen like very few others. I always want to learn and know what he knows.
I just hope this guy is cooking into his 100’s ♥️♥️
Enjoy everything Jacques does
See
He is my cooking hero :)
I literally clapped at my phone when he scooped up the gratin and showed its lovely colors. He elevates simple food with love.
Back in the 80's this guy taught me about using olive oil on my potatoes be they mashed, baked, fried or w/e. I've been in his debt ever since!
Never get old!..
You're all-terrain chef!...
Respect.
11k views and not 1 dislike.. that is a 1st for me.. absolute treasure!
My favorite chef and human being of all time😍😍😍😍
Thank you for always sharing your talent . My condolences Chef Pepin, may your precious Gloria rest in peace 💜
Making a gratin/soufflé with leftover mashed potatoes. So simple it’s genius
Every video is a master class

Haha yes, I noticed that too!
Thankyou again MR Jacques Pepin. We simply love your style. I'm going to do this for my Mom, Thanks so much. You're the best!
Very easy and simple way of doing something which you also enjoy...look casual as it is very easy for him just like fish to water... great learning experience 👍👍👍
I have left over mashed potatoes from last night and that second baked dish is for sure what dinner is going to be tonight
The absolute Master! Garlic should be it's own food group!!!
Mr. Pepin, your talking makes me calm. I looooove watching your videos and listening to you ❤️Greeting from Canada 🇨🇦
OMG that baked potato he put in the oven I'VE GOT to try that it looks AMAZING!!!!!
Its called a gratin. A baked potatoe is very different dearest

May God bless you forever!!!
