No, we don’t have air conditioning at our bakery. And it definitely gets quite humid here in Seattle, on the many rainy/drizzly days we get. It can be tricky to make sugar flowers when the air is damp and warm, so it’s worth investing in a dehumidifier for your workroom. That would make it much easier. So would using the right gumpaste - we have a recipe in our description box for gumpaste that still works really well in humid air. I’d also recommend storing your flowers in airtight bins with some silica gel packets tucked inside to absorb extra moisture. And thank you for the compliment!
No, sugar flowers like this can’t be made with fondant. Fondant is for covering cakes. Gumpaste is for making flowers. Fondant doesn’t have the elasticity, strength, or quick-drying capabilities that gumpaste has. In other words, you can’t roll fondant nearly as thinly as gumpaste - not even close - and it will never dry out and hold its shape in the way that gumpaste does. Our recipe is linked in the description box above if you’d like to make your own gumpaste - it’s very easy!
