@@CreeksideSimplicity That depends on what the purpose is according to the maker. Me personally I could care less about the bacteria, I like the fermented flavor. We all have different tastes and goals, that's the beauty of home processed foods, we make it our way.
Hello, I just ordered this system and started some beets and cucumbers in two separate jars. How long does it take to ferment on each of them? The pamphlet mentions anywhere from 3 to 15 days? What do you recommend?
My response is probably a bit late, but I recommend starting to taste it after the 3 day mark. Once you like the taste, go ahead and refrigerate to halt the fermentation. I tend to go anywhere from 3 days to a week.
Salsa means "Sauce" in Spanish, there is no recipe for one Salsa. In this case you are making a very nice TOMATO SAUCE " or "Salsa de tomates" You can also make a Pineapple Sauce or Pepper Sauce etc. Salsa does not necessary need have tomatoes.

You can jar can your fermented produce and make it shelf stable the same as any other canned produce.
That kind of defeats the purpose though, as then it kills all the beneficial bacteria and it’s no longer raw.
