Something that doesn’t get too dense of a canopy and doesn’t get super tall. Check out Cercidium or Prosopis.

Wife wants olive tree that doesn't go really tall like less than 12-15ft and fruitless. Would you know such variety?
Swan Hill would be the best bet. It can get taller than that, but they grow so slow they are very easily maintained at a lower height.

Fairly non invasive. In their old age they do tend to form a large trunk base, so just be aware of your planting space.

Potentially, it depends on the individual micro climate. It would of course need well drained soil. It’s worth a try!
