It's a japanese pickles maker called Tsukemono Meijin. Thank you for your comment :) If you can't get momishiso, try to do this way! 1. Wash the red shiso leaves well and rub with 1 tablespoon of salt. 2. Squeeze out and discard the dark purple juice. 3. Do this twice.

Yeah, we used rice vinegar.
You can make with white vinegar but you should reduce the amount.
White vinegar is more sour than rice vinegar.
Ginger should be added too
