I always liked what they did for Benjamin on Insane. Can't really give him out-of-nowhere legendaries since the only ones in an evo line are Urshifu (gen 8 mons are only special encounters in this game), Solgaleo/Lunala and Silvally (also Naganadel if you consider Ultra Beasts legendaries), so instead he has an actual decent and fair team, which, while it ignores him being a Bug specialist, it does make up for his strategy being that he uses a bunch of Pokemon whose pre-evolutions are still great in their own right like Haunter or Kadabra, or Pokemon whose pre-evolutions used to be fully evolved at one point, like Chansey, Magneton and Rhydon. Also him reverting to a child isn't just a detail, he himself says I think in his Gym battle that he was born with that condition that he tends to revert to a child when he's excited and whatnot. It's pretty silly even for Pokemon standards, even knowing the reference.
Awesome take. It is interesting that while all the other gym leader rematches are stacked with legendaries, Benjamin manages to be one of the hardest battles without using any legendaries at all. His team is super optimized for this gimmick and it makes for an awesome fun and difficult battle!
