Sorry for putting Episode I the 7th xD I just don't like it. The duel against Maul is amazing, tho.
My favorites characters are Windu, Obi-Wan, Yoda and Palpatine...
My favorite duel is Anakin vs Obi-Wan, but Maul vs obi-Wan and Qui Gon is close. Like you said the Dooku one is underrated
I just watched episode IX but I don't know where to put it. I didn't like it at all, not saying much more because of spoilers.

I know people don’t like episode 1 but it’s just like nostalgic for me 😂
I wish they’d do a Mace Windu series on Disney+! Like a young Windu would be soooo dope
