Easy Pork and Potato Foil Packets / Twisted Mikes

  • This easy and delicious hobo packet recipe can be cooked in your oven or at your favorite camping site. We make a pork and potato hobo packet, but you can substitute some steak or chicken. Easy recipe for when you are on the go and don’t have a lot of time. Enjoy!
    Preheat over to 425 or place 2 inch’s of charcoal in fire pit and let it come to medium heat.
    Take 2 large potatoes cut them into 1” chunks. Add to 4 qt water with 1/4 tsp salt. Let come to boil and cook for 5 minutes. Drain.
    In bowl place 2 lbs of pork that have been cut into 1” pieces. We used pork steaks. Then add your potatoes and the following:
    1 thinly sliced onion
    2 tbsp dried parsley
    1 tbsp Italian seasoning
    1/4 tsp salt
    1/4 tsp black pepper
    1 tbsp olive oil
    Mix well
    Tear off 4 12” aluminum foil squares.
    Place 1/4 mixture into each square along with 1 tbsp butter. Fold aluminum foil together until it is sealed along all sides. See video for instructions.
    Place in oven at 425 for 20-25 minutes
    Or
    Place on hot coals for 10 minutes, then flip and let cook for another 10 minutes.
    Check temperature of pork. Make sure pork has a minimum temp of 165 for at least 30 seconds.
    Packets will be hot, be careful of the steam. Enjoy!
