    I just turned 55, like Renea been cooking, baking & canning all my life. A mashed potato hack I picked up from some elderly ladies long ago was to chop my potatoes the night before, soak them overnight in salt water, then rinse. Gets the starch out. I add a small sweet onion to the pot. It makes the whitest potatoes & add nice flavor.

    Its great that you love to share. The stuffing/dressing is my favorite part of Thanksgiving. I used my mom's "dump & stir" recipe for her stuffing. She loved Thanksgiving and I am honored to have learned to make it by smell and how it looks. The celery/onion/sage/poultry seasoning being sauted is my favorite childhood aroma that reminds me so much of my mom. ❤

    In the U.K., we serve turkey with Cranberry sauce, bread sauce, and pork stuffing balls or chestnut stuffing usually. Being from the NW of UK, we like thick gravy, roast potatoes cooked in goose fat, roasted honey parsnips, sprouts halved and cooked with bacon pieces (or garlic croutons), and mini sausages wrapped in bacon. I was taught to cook turkey on its breast in the foil tent method, like you demoed, but always cook stuffing separate to prevent food poisoning. I just pop an onion and a lemon in the cavity, as this is loose and air can move around it prevents cold spots. We turn it over and cover in bacon for the last 20mins of cooking. This was the method our big turkey producers advised me and I have to say breast down does produce the most moist bird. With mash I would never add milk, we like it thicker, just add butter! Nice to see how you do it over the pond!

    We're the same age & I learned to cook from my grandmothers too. One was Italian and one was Polish, so I was lucky to learn so many different things! My favorite stuffing is my Italian grandma's recipe. I doctor it up just to make it simpler, but I use bagged or boxed stuffing, add roasted chestnuts, sausage, sauteed onion, celery and about a half of a granny Smith Apple. She used raisins but I prefer the apple. It gives a tiny bit of sweetness along with some texture. I don't stuff the turkey with it. (I use cut up oranges, lemons, onions in the turkey). I put it in a pan, dot it with butter and put it in the oven while the turkey rests.
    PS: I have that same pan and 2 others of different sizes. They were my Italian grandma's pans. I don't know how old they are but she passed in 1995. I'm 57 and I just always remember her having them. (The blue one with the white dots)

    Hi, I have suggestion. If you take a couple pieces of cheese cloth approximately 18 - 20 inches long. Cut and place on a platter, open cloth wide place by the large serving spoonful. You really do not have to worry about the texture, mine is a little looser than yours. You tie both ends of the cloth in knots, and stuff your bird. The stuffing steams in the bird, without going through the bird. Either type of stuffing homemade or semi - homemade works well. Hope this will help anyone that does not feel comfortable stuffing a bird or just likes an easy clean-up. Caution: when you get ready to remove the stuffing. Let it set in the bird 20 - 30 minutes. I usually baste one last time. Then with 2 - large serving forks pull out slowly. If too much steam from the stuffing let rest another 10 - 15 minutes. Cut one the end and spoon it out. Large serving spoon works well. Hope this helps. God - Bless!

    My mom always used milk in her stuffing instead of water and about a dozen small eggs in the stuffing. I don't use milk much at all so i use chicken broth and use 2-3 sticks of butter depending on the size of the bird. I boil the giblets and cut them up tiny for the kitties and give them the broth from boiling them. So i taught my daughter how to make it my way. It tastes about the same. I do double wrap my bird in foil before i put it in the roasting pan. Unwrapp about 2 hours before its done and baste it while it's browning. Never had a dry bird EVER!

    I stuff both ends too. But, I find it easier to turn the bird breast down and stuff the neck end then pull that skin over it and slide my turkey from end to end turn it back over and stuff the other end. The skin will be tucked under the bird holding the stuffing in the neck end and my mom taught me to stick the heal of a piece of bread over the end of that stuffed end to hold the stuffing in,( but, I don't always do the heal thing)

    I haven’t roasted a whole turkey, in years, since I learned about spatchcocking a bird; that’s the only way I cook chicken and turkey nowadays. It's also been a rite of passage for new suiters to join the family! 😂😂😂. There are no measurements. Ready?...... you mix old fashioned oats, chopped onions, poultry seasoning, salt and pepper in a large bowl. Next, are you ready? 1 1/2 pints of saved bacon grease. Mix well and stuff the bird. If its a little dry add some chicken broth. 😊😊❤❤❤❤❤It is so delicious.

    Hi Renea! I know you don't mean anything by it but don't think it's just all young ladies watching your videos. I'm a 59 year old father that's been watching your videos for several years and although I've been cooking forever, I can always learn something new from you! Thanks and keep doing what you do! You and your family are so enjoyable to watch and you're such a great teacher! BTW, Mr Wayna is a lucky man to have you and you for him!

      I really am sorry. I never gave it much thought. The two ladies asked me to make this video so I addressed them without even considering the men. I know you have been with me for several years and I so appreciate you. I really meant no offence to anyone.

    I think “back then” most oven were gas and not electric and sautéing veggies wasn’t necessary. Those ovens were HOT. I’d love to have my mother’s old oven.

    Hi Renea, how are you? I have a bit of a conundrum. I want to confit some garlic but every where I look I get different instructions. I know that if it isn't done right there is a risk of food poisoning.The problem seems to be that oil is a non-acidic environment and that allows toxins to grow on the garlic if stored out side of the fridge and you can only store it in the fridge for a short period of time. So I thought there is only one person I trust to tell me if and or how I can get around this problem. I know you know what your doing and I trust your instruction,can you help me?

      Most recipes are wonderful and safe, however, it is in the storing where folks get into trouble. Once you finish your garlic confit you will need to cool it is fast as possible then it needs to be stored in the fridge and it will last for months in the fridge. I know some say only a few weeks but it will last months. It is not shelf stable for the pantry and will never be.

    Why don't you allow the bird to rest after removal from the oven instead of hacking it up right away , and what no gravy ?

    We are told NOT to stuff the turkey. Bake your stuffing in a baking dish instead.

    • @LittleVillageHomestead
      @LittleVillageHomestead 10 месяцев назад

      It is not recommended because some folks tend to undercook the turkey which will result in a bird full of salmonella. You CAN stuff the turkey, but you MUST ensure the inside of the stuffing reaches 165°.

    The turkey looks lovely. But I don't like any meat juicy because I think of that is not done!
    I like all meat, chicken, turkey, burgers dry and then to me they are done.

    • @LittleVillageHomestead
      @LittleVillageHomestead 10 месяцев назад

      Well there is a difference between juice and moist. I don't like juicy either because it is most likely uncooked, however, a moist piece is done to perfection and never dry.
