This is true. After eating food from the konbini in Japan, I’ve stopped eating out when I came back because why do I want to spend $20 for food that’s worse than food from the konbini?
Something a lot of people forget to mention is than Konbinis rotate their food options often (even among the basic stuff like onigiri and sandwiches) because japan has a very developed seasonal culture , so you basically have new stuff each month or so that will not exist for the rest of the year due to avaliability or special holidays
I did an internship in Japan, specifically Okinawa, some years ago. If not for a nearby conbini and hotto motto, outside of a long walk/ bus/ taxi ride, procuring food would have been difficult, especially since my Japanese ability was virtually non-existent.

Yeah konbinis have fresh prepped food for each meal. Obviously it's from a centralised kitchen then distributed, but that's no worse than any chain eatery or takeaway place. And those aren't just all fried foods too, they're the same dishes that the locals have. Variety-wise you can easily see maybe 10 types of onigiri and maybe 8-10 rice/noodle dishes, plus other sides. That doesn't include the sushi, the deep fried foods and the oden, nor the rest of the usual frozen/shelf-stable foods the konbini has. And a large chunk of these will rotate seasonally. It's not a healthy diet by any means, but if you're sticking only to the fresh stuff and balancing out the options, I'd say it isn't too different from getting takeaway from an eatery every day (well, maybe ain't that great for the wallet, you're getting smaller portions for the same price in exchange for the convenience).
Close to my work there is one convenience store that sells all kind of food and products and its amazing, I can eat something different everyday for months without repeating, its a little more expensive that your typical store, but its worth it, yesterday I buy 2 mole tamales, 1 stake onigiri and a cherry cola.
