Hannah, we have a convection oven as well. We also experienced the wet brownies. We learned that cooking in metal pans, instead of glass, works much better. So, we use a metal cake pan now. You did a great job!

Two recipes in one for anyone:
1. Rice with sautéed peppers, onions, and pineapple (jarred/canned is fine) you can add chicken if you want
(And then you can make it your own by including soy sauce, sweet and sour sauce, sweet chili, whatever floats your boat or no sauce)
2. Cheese quesadilla with sautéed onions, peppers, with a dollop of sour cream/or Greek yogurt and avocado with lime cilantro (or without it) (again you can all add chicken if you want)
Two easy recipes my mom gave me, and a rice cooker, don’t sleep on a rice cooker, you guys, sautéed veggies def easiest thing ever

It's little wins like these - making your favorite meal on your own, cleaning up after yourself, asking for help (yes, calling your mom every 10 minutes counts) - that helped me feel like I was coming into my own when I moved out for the first time. They still help me feel that way today, and I'm 25 now! Keep doing all the things, girlie. You're doing great

Ok, hear me out. Leftover chicken mixed in with some microwavable mexican rice that I accidentally overwatered mixed with some instant potatoes. May not look appealing but that with your personal preference of sauces and it's so good. I called it my makeshift chowder. My family laughed but that's an internal recipe. The best meals you can make out are the impromptu dishes that you've added either your own spin and/or thought you messed on and added something else to it. Great job Hannah on the casserole. Look forward to more cooking as well as budgeting for meals for one at home as trying not to eat out as much.

You should get a silicone dish cover to use to cover bowls and stuff when you’re putting it in the microwave! It stops splatters the splatters the same way the plastic wrap does but you won’t have to keep using all your plastic wrap!

Just a couple tips, from a mom.....Have the chicken in the pot before adding the water, it's easier not to add too much.
Put the rack down one level so that the heat circulates evenly around the pan, also turn pan half way through cooking. These tips can help with the brownies too. Someone else mentioned a metal pan also, they heat differently than glasss.
Throw the peas in with the casserole before cooking. If you like them add sauted peppers and onions. So many ways/additions to change up this dish.
Love the cooking videos. Your dish looked wonderful! I'm going to have to figure out how to do this gluten-free because now that I see it I realize I miss dishes like this. Thanks for the inspo!
I have a small kitchen, that is way bigger than yours, and I'm a messy cook as well. Typically I make the mess right after I've cleaned my kitchen, then have to clean again! Isn't it nice though when the cook time gives you enough time to clean up before it's done then you just have your dinner dishes to clean after?

Omg HANNAH!!! This is one of my favorite meals from growing up, we have very similar recipes but we add a can of peas & carrots to the whole mixture before it goes in the oven and its amazing! Though Id share since you liked the peas w it so much!!!

If you put foil over it, it will cook more evenly! Also you could put the peas into the casserole. It’s so cute that took you three hours to make to lol. Keep cooking!! 😋
You said you weren’t good at multitasking but that’s an actual thing they do as professional chefs, it’s called “mise en place” where you basically get everything out and ready for what you’re about to make so don’t worry about getting better at multitasking it’s actually easier to do it the way you’re doing it rn

Loved your cooking “episode”! Does your Ninja have a broiler setting? At the end of the baking, you can set it to broil for a couple minutes and it will brown the top ;)

I saw this TikTok which might help so apparently recipes ask you to shred cheese yourself is because the shredded cheese is coated in starch which hampers with the melting so if you do have to use shredded cheese rinse it in waste to get the starch off. Hope this helps!
Just a tip you should salt/season the water you boil your chicken in.
