If Allah swt is the most merciful, then no human being can ever be more merciful than him, and if you believe in the Holy Qur'an.... Then you must also stop believing that Allah swt would punish us for shirk. Because if you believe that you are essentially saying, that Allah swt is less merciful than us human beings. You are contradicting Qur'an, and Qur'an says if you find in it any contradiction, you can believe it's not the word of God. Then you are essentially saying Qur'an is not the word of God. Use your common sense and understand that the punishment for Shirk and Disbelief is a human corruption/ contribution. Because in the early days of Islam, muslims were facing wars, if muslims could permanently convert defeated people by saying you will be punished on hellfire if you don't believe in Islam (after getting Dawah) and you will be punished in hellfire if you leave Islam, muslims would have permanent converts and would increase in number and would decrease the number of muslim lives that are lost.
