The fish ball in the Chinese restaurant is probably "xiu-mai", there are 2 kinds of xiu-mai, 1 is yellow & served dry (also in the video), the other is rounded, meaty & served with sauce (the one that u didnt know what it was)
haha I guess the fish ball is just fish ball since I never know any kind of xiu mai is like that as a Chinese😄

Idk if you’ll see this but I’ll give you a little tip for your hamburger steaks. Before you cook the whole patty, take just a little ball of the meat and cook it. Like a little tiny mini patty. That way you can taste it and adjust the seasoning. I like to add garlic powder, onion powder, paprika, dried parsley, salt and pepper along with the fresh onion and garlic to mine! Also I sometimes cook mine in the oven especially if I make them thick. That way they cook all the way without burning. Hope that helps you make a more successful dish next time! 🥰
