- How to can basic tomato sauce ! Today we are canning our tomato sauce which is very similar to crushed tomatoes or tomato puree ! We water bath can our tomatoes with no additional seasoning, leaving them more versatile in terms of cooking ! Tomato Sauce !

We're doing just Sam Marzano's this year. 10 gallons in the freezer, another
7-8 on a table, and still producing. Most on the plants are average Roma size,
but all 6 plants are loaded!
Freezing them as they ripen makes canning season so much easier.
Do them when you've got a large batch instead of small batches
Do them when it's cooler out
Do them when you're caught up on other canning
Do up 10-15 jars, (if you're short on jars) and can the rest up as you empty
jars.
or just thaw them out and make sauce as needed.

Tina, can a few leaves of basil be added before water bathing the product without any issues?
That would not hurt it at all... You could also tie them in a sachet and cook it, then remove the sachet before canning...

We have, but it is a TRE SPADES...
I wonder if KitchenAid has an attachment that would do this for us.

can we can this tomato sauce without so much salt? I have a friend that cannot have salt at all. so, is lemon juice enough? or is Himalayan salt going to be okay? if you don't know, that's okay

You might want to tell what you used for a mill on the tomatoes for your new subscribers or a link to your old video where you go over it, I remember your old video where you go over how to use it, and it would be my dream to have one, but for now I use the hand crank one. Those tomatoes are perfection, the sauce looks versatile, what a haul of tomatoes, fill those shelves.
I appreciate you teaching us things but I'll opt out on this one since I only have regular tomatoes and not Roma type.

I am so glad that your crop of tomatoes did so well this year. The heat got to mine and I got one tomato big enough for sandwhiches and 3 or 4 about the size of golf balls. The rest had blossom end rot or just dried up and fell off the vine due to the heat. Just too much money put in them for the cost. Very happy for you guys though.
Try san marzano or italian plum tomatoes. They almost NEVER have issues!👍🍅
Best thing for blossom end rot is calcium (crushed oyster shell) and magnesium (epsom salt)... That should clear it up for you...

There is no need, the machine removes both the peels and seeds...
