Preparation
Hyderabadi Khichdi is a comforting, flavorful dish made with rice and lentils, often served with a tangy tomato chutney or pickle. Here's a simple recipe to prepare it:
Ingredients:
.Rice: 1 cup (preferably Basmati or Sona Masoori)
.Split Yellow Moong Dal: ½ cup
.Onion: 1 large, thinly sliced
.Green Chilies: 2-3, slit
.Ginger-Garlic Paste: 1 tsp
.Turmeric Powder: ¼ tsp
.Salt: To taste
.Water: 4 cups
.Ghee (clarified butter): 2-3 tbsp
.Cumin Seeds: 1 tsp
.Cloves: 3-4
.Cinnamon Stick: 1 small piece
.Bay Leaf: 1
.Coriander Leaves: 2 tbsp, chopped (for garnish)
.Lemon Juice: 1 tbsp (optional)
.Instructions:
.Wash and Soak:
Wash the rice and moong dal together until the water runs clear. Soak them for 15-20 minutes. Drain and set aside.
Prepare the Khichdi:
Heat ghee in a pressure cooker or a heavy-bottomed pot.
Add cumin seeds, cloves, cinnamon, and bay leaf. Sauté until the spices release their aroma.
Add sliced onions and green chilies. Sauté until the onions turn golden brown.
Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add the soaked rice and moong dal to the pot. Sauté for 2-3 minutes, ensuring the rice and dal are well coated with the spices and ghee.
Add turmeric powder, salt, and water. Stir well.
Cooking:
If using a pressure cooker, close the lid and cook on medium heat for 2-3 whistles. If using a pot, cover and cook on low heat until the rice and dal are fully cooked and soft. Stir occasionally to prevent sticking.
Finish:
Once cooked, open the lid (if using a pressure cooker) and fluff the khichdi gently with a spoon. Adjust the consistency by adding more water if needed. It should be slightly mushy.
Garnish with chopped coriander leaves and drizzle with lemon juice if desired.
Serve:
Serve hot with a side of tangy tomato chutney, pickle, or yogurt.
Tips:
For a richer flavor, you can add a small amount of milk or coconut milk towards the end of the cooking process.
You can also add vegetables like carrots, peas, and potatoes for a more nutritious khichdi.
