      I just seen where I commented on this video a while ago saying I was getting a smoker built. I wished I could post a picture on here I’m sitting outside right now on my 250 smoking some pork belly and ribs watching some of your videos again.

    Great informative video - and the bark was spot on - what did you set your oven to for the 13 hour rest - 170?

      Thanks, and yes, I put it on 170 my oven runs about 165 I checked it with my other temp probes.

    You mentioned the first you got from the 4 splits gave you 1.5? How hot was the hottest it got and how long did it stay that. Bc it dropped to 275 when you added another 4 logs.

      It never got over 285. And when you add wood it will drop just a little then come right back up if it's coming up too fast I'll close the door down a little bit.

      Some times I do sometimes I don't, don't really see no need to I smoke fat cap up. Thanks for watching.

    Nothing wrong with that brisket, what would you estimate the cooked weight was
