I make my own dark brown sugar as well...made some today as a matter of fact. What I was really surprised at was the fact that it stays fresh much longer. So far I have never had it go rock hard like the boxed tended to do. I also make my own powdered sugar as well. Shalom

Great tips! Can't tell ya how many times I have used a butterknife as a screwdriver too, hahahaha. I'm better about it now, I have a leatherman wave multitool I keep very handy for fixing random things like that.

Excellent info. I've never made my own brown sugar, just haven't but I do use molasses quite a bit. I'll do my brown sugar with xylitol and bochasweet and see how it holds up. I'm a diabetic and I use brown truvia (you ONLY use half the amt of this sweetner, which is stated on the pkg) But if I can do it with my sweetners, it will save carbs, although I don't use it alot. I know that xylitol attracts moisture, so I'm wondering if it will prevent hardening or maybe it will "melt". I'll do a small batch. But for the regular mix you make, how long and how do you store it. I'm sure there are others who will go thru phases of using brown sugar regularly and then may not touch it again for 6 mos. I'm wondering what's the longest you've had some to last and when you make a new batch, do you first remove any from the previous batch to use first or just mix it in with the new batch. You're a gem, keep up the great work.
Thank you 😊 - I store it the bucket that I put it in there. It has a rubber gasket on the lid. I don’t use sugars very often, and the brown sugar I just ran out of, was over a year old. I don’t know that this mixture would work with alternative sweeteners. I wouldn’t risk it to be honest, since alternative sweeteners are so costly. I think instead I would just add molasses to the recipe when it is made, in proportion to if you were using sugar.
I used to store it in a large mason jar or swingtop jar. But when I started making larger batches, to do less often, I started storing it in my food grade bucket that you see me transferring it into after mixing it up.

I store it in the pantry in that bucket. They batch I just used up was over a year old. I’d had no issues with it hardening up.
