Awesome! I just did something similar but I used a sweet heat seasoning in the cream cheese with jalapenos then smoked. The bacon tends to stay chewy so I don't eat it but it definitely adds moisture and flavor

I don't have the patience for video making or editing.. but slice your strap thin put it in your hand and add to this a chunk or cream and havarti cheese a quarter of a jalapeños, wrap in a peice of bacon and smoke it for about 2 hrs give or take depending on batch size.. peoples choice telling you..

The wolf pulled a movie style hood slide right to the deer. Fun fact: Adult gray wolves are about the size of your truck's entire windshield. I had neighbors ask why I didn't shoot them when I encountered them. They are fast enough to run down deer in the open. It's like trying to shoot Jeff Gordon whipping by you in the Daytona 500...

I've learned that if you run a really high heat and thinner bacon it will crisp nicely and easy to chew
Looks absolutely amazing, just a tip do your ends first you can use your overlaps to hold it all together.

Oh yea I forgot and marinate it in milk overnight, the protein in milk tenderizes it like crazy and YEA BABY!!

Looks phenomenal... although I'm not a fan of cream cheese. Have you ever stuffed the back straps with shredded cheese instead?
I have. But I'm a cream cheese guy and the shredded cheese doesn't hit the spot like cream cheese

I’ve never had to do that. Even the bigger ones come out very tender when you use the tenderizing hammer

Chives and onion was better in my opinion

I’m sure it’s very good but you might as well use beef to me it ruins the idea of deer but it looks good
