    just food for thought.......the reason Adel's fries took over 15 min to fry....is cause he didn't "blanche" them first. you need to flash cook , or blanche them for 3 min to seal the potatoes...so they don't absorb so much oil......then .take them out of the hot oil.....set them aside for about 15 min miinimum.....then recook them again for 3 min....i worked in a "chip wagon" one summer, and this is the trick all fry trucks use....it's also perfect for getting ahead of a rush...you blanche a whole bunch of tubs full, then they're ready for your lunch/supper rushes
