    I have been trying to make nutritional yeast at home without success for a long time. After a lot of research, I realized there is no way for me to make this at home.
    Making nutritional yeast as we buy it from stores requires a special lab that’s full of commercial equipment. There is also a scientific fact that ordinary people like me had no idea about it. So I came up with the idea of mixing what I have in the kitchen and make this homemade nutritional yeast substitute, and it came out great. It's so tasty, healthy and best of all--I know exactly what's in there. I hope you try this recipe!

      But this is not a nootch substitute, because it is NOT yeast and it does not have the B12 etc which nootch is a source of. Brad at the Bon Appetite test kitchen has his series «It’s Alive» and he has tried making so many things that can add flavor as well as be healthy. One thing he has made, is miso powder, which you made here too, only you mixed sprouted chickpeas in it. I bet it is another great flavor enhancer for us plant based folks, which is great 👏👍🙌 - but it is NOT a nooch substitute as it doesn’t do the same things for us... Awell, that’s at least how I see it... ☺️

      @@virginiagross5836 MSG is natural, delicious, and in everything. No, really. Aged cheese, cured meats, tomatoes, soy sauce, tamari, pickles, and miso are all naturally high in MSG. Glutamic acid is a natural amino acid that's used by nearly all living things. When it is denatured (ie cooked, fermented, or otherwise broken down chemically) in the presence of sodium chloride (table salt), it forms mono-sodium glutamate, or MSG. There is a taste receptor on your tongue that detects MSG as a proxy for detecting protein that we experience as umami flavor. Sweet receptors detect carbohydrates. Sour detect acids. Bitter detects alkaloids. Salty detects salts. This provides a lot of information to your brain about the macro-nutrient content of your food. We actually can't detect lipids directly by taste. That's why refined oils have almost no taste. It's also why rushing your teeth changes how food tastes. It removes the tasteless lipids from your tongue allowing more material to reach your taste buds.

    Looks it could be used as protein powder for take away as well. (adding green powder - kale, probiotics, warm water and there you have it.) All videos are mindful and efficient promoting health.

    THANK YOU SO MUCH FOR THIS RECIPE!!!! Per Medical Medium (who has millions of followers for a good reason: his advice has cured millions of people of horrible health conditions, including me!), nutritional yeast contains MSG which feeds pathogens, so it makes people susceptible to disease. I've been wishing for a substitute and am so glad you came up with one!

    According to Anthony William, author of the Medical Medium book series, as well as some Doctors on youtube, Nutritional Yeast is a known neurotoxin and has the same chemical structure as MSG (monosodium glutamate). So thank you for making this healthy alternative!

      It actually tastes very similar to the store bought version--it is satisfying and flavorful in a surprisingly similar way. I have used it with popcorn, spaghetti, and porridge with good results, especially as a parmesan cheese replacement. Thank you very much for the kind words about my videos too!

      I like it on my salad that I mix salad greens, cucumbers, tomatoes. I then squeeze lemon juice, sprinkle salt and drizzle extra virgin olive oil, and sprinkle this nutritional yeast on. It's so good. I also use it to make popcorn.

      You're welcome. Thank you so much for your kind comment. I don't know the shelf life for sure, but I leave mine on the counter. It stays dry and doesn't seem to go bad. However, I usually use it up about a month or so.

    Honestly! Everyone's going on about the missing B12 in these homemade recipes, when the fact is, B12 isn't naturally occurring in any nutritional yeast. It's synthetically added to boost the value of the product and give it claim to being a necessity rather than a food enhancer.
    Personally I'd never buy noosh just for the added supplements. I buy my own B12 for that. It's the flavor I'm after. So if there's a way to make it cheaper, that's just a win.
    Can't wait to experiment with some of these homemade noosh recipes!😢

      If your ingredients are dry, it keeps a long time. I can't tell how long for sure though.

    This looks like a great way to Stretch store bought nutritional yeast. I could probably mix the two and then i’d still Get the vitamins!

    is it ok to use non stick spray on a pan then , I do not have a baking mat , only parchment and you said that does not work for the mise. any advice ?

      I have never done that before, so I can't tell. Parchment paper works but not as easy as silicone mats to remove when it's done.

      can your oven go as lower than 140 degrees (F)? you can use it instead. The important thing is to make sure not to kill the good bacteria in miso with the heat.

      Sobre el sabor, sí sabe mucho a queso. Me sorprendí que sale tan parecido.

    I think you could just smash the chickpeas in a bowl and inoculate them with the live miso bacteria for some hours or overnight then season and dehydrate it. It would use a lot less miso if it worked

      Hello Violette, and you are very welcome and thank you! The white miso is best for making the look of this very close to the nutritional yeast we are used to in color, however the flavor is about the same when using red miso, so I think you will enjoy it either way.

      The miso is the key to give the umami flavor similar to commercial nutritional yeast. You don't need to sprout the chickpeas, I like to sprout them first as they are easier to digest.

    If you wanted to use soy instead, I imagine you could use okara from making sprouted soy milk and regular miso to make this too. :)

      No, it's not the same as baking yeast. You get the same benefits as you get from eating chickpeas and miso from this but in a different form. The taste is very similar to commercial nutritional yeast.

      Louie P if you have a Whole Foods or fresh market store near you, they have it, although it’s expensive at those specialty stores. And, if you have amazon available to you, you can find it there as well.

      Depending on where you live you can find large amounts of miso for cheap at Asian grocery stores. The T&T chain has many varieties to choose from and I usually opt for a bagged version from Japan. It lasts a loooong time!

      Yes miso way to expensive, it cost more than nutritional yeast in Norway.
      Use soaked split mungbeans that is soaked for 4 hours, drained and roasted on the pan for some minutes. In the blender with a little salt . Tasted nutritional yeast and is cheap. 1 cup mungbeans/2 cup water . Also easy!

      You're welcome. Miso is fermented bean paste. Soy miso is the most common, but there are other varieties for people who can't have soy available too. You might find this useful en.wikipedia.org/wiki/Miso
