INGREDIENTS
Air fried chicken
-10 chicken drumstick cut in half and clean.
2 tablespoons ginger paste
2 tablespoons garlic paste
4 tablespoons onion paste
2 teaspoons anise seed paste
1 tbsp of sea salt
1 tsp of msg free bouillon
YAM STEW
2-4 tbsps. of coconut oil
1 onion, chopped.
1 tablespoon Anaheim hot pepper.
1 tablespoon ginger paste
1 tablespoon garlic paste.
2 tablespoons onion paste.
2 teaspoons anise seed paste
Half medium yam, peeled and cut into small cubes (minding that after cooking the size will be reduced to about half)
2 cups of broth or water
1 small can of tomato paste
INSTRUCTION
Add ginger, onion, garlic, and aniseed seeds paste, bouillon and salt to you clean chicken.
Mix well, cover and let it boil for 7 mins, add 2 cups of water cover and cook for another 7mins.
Remove the meat from the liquid and place it on air fryer rack.
Air fried at 400 for 30 minutes flipping it midway through.
Remove and set aside.
Add 2 Tbsp of coconut to a new clean pan on medium heat, start sautéing the tomato paste. add more oil if necessary. Add ginger, onion, garlic, and aniseed seeds paste. Cook for about 5mins then add bouillon, hot pepper the cubed yam and top it with the meat stock. (Strain the stock from you prior cooked meat) Add more water if necessary until the yam is covered.
Let it boil for about 15mins or until yam cube is cooked then taste for salt (make sure not to add salt as it will turn salty when thicken). Start stirring with a spatula until the liquid become tick and the yam cubed dissolved to about half its initial size.
Remove from the stove and serve as is or with your air fried chicken.
Garnish with optional chopped cilantro or parsley
