Cold cheesecake from a lemon bucket 🍋Lemon curd🍋

Glass 250 ml
Springform cake tin, rim 22-24 cm
Ingredients:
250 g of your favorite biscuits
Blend into sand.
70 g melted butter
Mix until combined with cookies
Place the cookies on the bottom of the form (mine has a rim of 22 cm) and put them in the fridge while you prepare the mixture.
4 whole eggs
3/4 cup of lemon juice
grated zest from 1 lemon
half a cup of sugar
Heat on low heat, stirring constantly so that the eggs do not curdle
130 g butter
Add the butter and stir constantly until the mixture begins to thicken
Rub the cream through a sieve, cover with foil and set aside to cool
1 cup of boiling water
2 lemon jellies
Stir until the jelly dissolves completely. Set aside to cool.
200 g whipping cream 36%
Beat
Reduce the mixer speed and add 1 kg of cottage cheese from the bucket
5-6 tablespoons of powdered sugar
Add cold lemon jelly and mix just until combined
Pour the mixture onto the cold base
Spread the lemon cream (put blobs with a spoon on the entire surface of the cake)
Drag the cream with a toothpick to create uneven patterns. Place in the fridge for a few hours, preferably overnight.
