    I wonder if wrapping the thin end in foil would help with the toughness?

      Possibly, I'll look for a thinner brisket next time to solve the problem.

    Bro and now yall are doing carnivore diet too, love it. Been doing it over a year myself. Was at Suwannee river rendezvous for the 4th, smoked alot of meat.

    I love new gadgets as much as anyone, but my Primo XL has always cooked full briskets at 6 to 7 hours. Nice video 👍👍

      It's not the cooker, it's the temperature. Most truly believe you set your temperature very low and make it take 15+ hours. I just don't have the time or desire for those overnight cooks.

    Wind can be your biggest enemy for constant temp! Maybe make a foldable blind. What did it render out at? When done I use a big cooler. Wrap foil and with old bath towels and let it rest for a few hours. Try paprika also, garlic can bitter... Just my opinion and thoughts lol. Looks good overall.

      I can move my grill to the side porch when I see crazy winds. I honestly didn't touch it much to see when the fat really started to render. I like to set it and walk away. I also do the foil and cooler wrap myself, I was trying to keep this as simple as possible for others.

    What if you would had cut it in half before you put it on the grill, you had temp probe in both sections, that way when smaller section is at temp you were looking for it could had been removed leaving the larger section to go longer.

      I'm not a fan of cutting in half. It leaves exposed meat with no fat cap and tends to dry out those areas.

    Great job, neighbor. I cook them all the time in my pitbarrel smoker. And i have cooked them in 6 hours. I cook them for 4 hours, unwrap, and then 2 hours wrap. Melts in your mouth, lol

    Although Canada purports to using the same beef grading system as USDA, I don't buy it. I've compared the two and USDA Prime beef is significantly better than the Canadian Prime.
