I live in Ireland. That is a very old recipe I started baking it back in the early 70's and it is just called a fatless sponge. It was baked as a sandwich cake just like a Victoria sponge with cream and raspberry jam in the middle, it can also be made with coffee flavouring. Since being diagnosed coeliac I don't eat much cake any more. If I do bake a gluten free cake I tend to eat it ALL! Very bad for my weight and health. :-D

I tried this using aqufaba instead of egg whites. It tasted really good except it sunk quite a bit. I baked it 40 min. instead of 30 min. I think I need to bake it longer or higher temperature, or both. Who knows, I'm a beginner with using aqufaba. I had quite a bit of aqufaba left to I made banana ice cream. That did real well, because it froze before the aquafaba had time to settle. Thanks for your recipe.
I just made this . Yummy. I used half almond flour and half white. Delicious. I topped it with defrosted strawberries and whipped cream for extra goodness as a super desert. Very easy to make. Baked it in a glass Pyrex loaf pan. Cooled it in the oven. Came out perfect with a super crust

Oh my gosh. That looks soooo good. Wonder how it would be to add chocolate, or lemon flavoring, or other flavoring. My mother in law used to make the best lemon and sometimes orange, pound cake. Bet that would be to use for strawberry shortcake.
We just had this cake and really like it, I can think of so many ways to vary it but plain is fine. To prevent collapse I baked it in a 10 cup bundt pan for 35 minutes, slid out perfectly. Thanks so much for the recipe ❤
When adding in other ingredients like peanut butter, chocolate, etc add it to the yoke mixture. You might have to experiment the first couple of times to get the amount right but that is what cooking is all about.
I have found that any recipe calling for almond flour can be subbed with hazelnut (used to be cheaper than today.) as well. A bit pricier but a great different taste profile. Sorry. Starting to sound like public infomercials. Celiac 10 years. Also, either almond flour & ground sugar (makes powdered sugar as fine as you grind) 1:1 = a great "cookie type pie crust". Form. Bake. Eat. Don't let burn! Delish. I'm going to try your version.

Older ones last longer. Motor can run longer. KA help desk says not to run new ones for more than 3 minutes at a time continuously. Why I still have a hand mixer.
I'll have to try this!! We are gluten free (me by choice, husband is celiac). Have you researched molecular mimicry? Also...all grains have gluten. Things in the store marked gluten free are actually only wheat, barley and rye free.
How did it turn out? Did it crust over on the top? I had one lady say hers was soft not crunchy. Trying to figure out what the difference is. Would love your imput.
Deep South Homestead it turn out great. My husband and his friend love it. Half the loaf is gone. I did two thirds almond flour and one third coconut flour. I wanted to rise up a little higher. It has a real good taste. I don’t miss the butter or baking power or salt. I would love to see more of theses recipes of the old ways they use to cook. Keep up the good work.
Wanda, I have the "glass bowls" from my mother in laws old sunbeam. They are AMAZING. So perfect for bake mixing. The mixer died not too long before she passed in 93. But, I have those bowls. Also, I think you guys are helping a LOT of people one gluten free recipe at a time. I work at a store that specializes in dietary restrictions...especially gluten free. If there is ever a gluten free flour you want to experiment with...let me know. I can special order it at work and then mail it to you. OR find the same thing and ship it to you through amazon prime. Stores are about profilt. Obviously pricey. My youngest is in college and we get the amazon prime for half price. Even with my discount at work...it might be cheaper through amazon prime. Just let me know. Cassava flour is the most asked for gluten free flour that we don't have yet in our region. Hopefully soon. Some say for gluten free folks there's no other flour. I don't know since I am not gluten free. But, if our chain can order it....that means that it's available to me to let me order.

We have tried rice flour, but Danny was still having issues. I have many videos from 2 years ago with rice flour. The almond flour doesn't seem to cause problems. But rice can be used.

That looks awesome, Wanda. You could substitute lemon extract or any other flavoring in place of the vanilla to make a variety of cakes.
pure maple syrup is also an amazing substitute for vanilla extract! tastes just as good and really adds a sweet flavour to your food.

Wanda's may have that crispy crust because the inside fell and left the "roof" of it to bake without the support underneath.

Thanks for the tip on replacing 2 Tbsp almond flour with 2 tablespoon coconut flour so it holds together better.

Ground pumpkin seeds also make a great flour.

Use mostly stevia for sugar. according to the instructions on my pkg, you should still use some sugar to help it hold together.

The only way to improve this would be to add a syrup on top. Blueberry, strawberry, walnut, pecan, or just plain cane. mmmh.
