Texas Style Brisket Recipe

- Опубликовано: 15 янв 2025
- Texas Style Brisket has never looked, smelled or tasted so good. Chef Tom demonstrates how to trim a brisket and then employs the Yoder Smokers 20” Loaded Wichita Offset Smoker to cook a tremendously tender, superbly smoked full packer brisket, using butcher paper for maximum moisture retention.
With a 14-hour low and slow cook time and a straightforward salt and pepper seasoning, this Texas Style Brisket Recipe is all about patience and simplicity. Chef Tom throws on some R Butts R Smokin’ R Beef Rub to get some garlic flavor with the salt and pepper, and the result is a juicy smoked beef brisket with an unbelievable bark that slices like a dream and is completely worth the wait.

Hey tom what wood type did you use for this cook? Also, what yoder woukd you recommend if money wasn't a issue between the pellet and whichita?
allthingsbbq I have a question dude I just bought the same smoker. y du u need to cut off the top lawyer of fat for your first Biscuit? will it mess it up if u keep it

But it's not meemaw's special recipe. It had cumin, brown sugar and some more spices in it.
True
@@Jana_San_SS oh that's true too

That's how I found out what brisket was!!!cheers from australia
I just made my first attempt at a Texas style brisket and I used a lot of the tips and tricks you have shown. It came out amazing, super juicy, perfectly cooked. Everyone loved it. Thanks!
How long did you leave it in the pit and what was your temp at?? Then at what temp was the brisket before wrapping ??? Gonna do my first brisket tomorrow
That looks absolutely amazing. This made mine and my son's mouth water! He looked at me and asked if I can try to make it lol. I recently got a Traeger grill and have been looking for different techniques to grill/ smoke. I will definitely be looking at your channel for more tips. Also thank you for making your video family friendly so that me and my boys can enjoy them together.
Wow, I'm amazed. This brisket looks and probably tastes incredibly good. I'm from Brazil and we do have a pretty strong barbecue culture, our local meat is good, etc, but this Texas style really got me, very different . Thanks for presenting it in a such a beatiful way, you're talented as a cook and as an instructor.
"Ok guys so its been 13 hours, everyone got tired and went to buy Hamburgers and are already asleep, but the brisket is done and we can have it all for ourselves"
No gimmicks and guff’s or constant pop up’s and advertising. No promoting 1,000 different social medias….
Just straight too the point with great narration and amazing cooking skills my friend.
And I totally understand RUclipsrs need too promote themselves and contain adds too financially help themselves and their page but i will literally come across videos where the first 10 minutes is promoting themselves and their merchandise.
For example… 15 minute videos with 5 minutes of actual content is OVERKILL. This man right here got straight too Action with some damn good skills and narration.
From a born and raised Native Texan I strongly approve this brisket right here baby damn good cooking and content.
Sorry for my mini rant 😂 …but keep up that ass kickin cooking !
Thanks for watching and taking the time to comment!
i honestly can not handle how soothing this is to watch
Being a german who just tasted brisket for the first time in my life last week in Austin Texas I have to say: my mouth is watering up man

Hunter Whiddon hell yeah I been there once it was amazing
Love the zoomed in slow-mo shots, the rub rain was my favorite
You are the king of texas bbq, very inspiring.
Went down to Bastrop this past week to set up our deer blinds. Stopped by a bbq joint and had some nice bbq. Brisket, Sausage and Pork steaks. With mac & cheese and potato salad on the side. And of course plenty of white onion and pickles to go along with it. With two slices of bread and an ice cold Coke, nothing beats it!!
Oh sweet mercy. This is art.
Why am I watching this at 3 AM? Im starting to get really hungry
2:15am lol
04:46 am, actually this is the perfect time to Cook It If i want for dinner 😂😂😂

This Texas boy gives you 2 thumbs up! Great looking brisket!
Thanks! It was delicious... and it didn't last long enough for seconds unfortunately. Thanks for watching!
I laughed so hard when my dad said "It looked like morning early in the video and it ended at sundown". Well, that's barbeque, Dad. It's done when it's done. 😂
All these people on here talking shit are probably the same people who boil ribs and think famous daves is real bbq, you are one of my favorite channels to watch, keep it up chef Tom.
Bayboy400 famous Dave's sucked. Tasted like they microwaved my brisket lol
Famous daves is amazing in Az🤷🏽♀️
Famous Dave's rub sucks. It has anti caking preservative crap in it. I use a shaker with kosher salt and course black pepper. I saved money doing this and works great on all my bbq
@@skalamaz3 I think the only good stuff about Famous Dave's is devil's spit
I'll talk shit cuz I've done several backyard briskets & I'm from Texas. This ain't "Texas style". Sure, you can season anyway you want but if it ain't traditional salt & pepper it's no longer "Texas style". The reason for the simple seasoning is because you're trying to get the beef flavor to come out on top instead of a bunch of other flavors. I've had brisket with other rubs & sure they tasted great but once again, Texas style is salt & pepper.
The texture so satisfying to watch and to eat too
The sound is really satisfying
Just subscribed to you guys truly inspirational! You’re cooking the way I want to over here in England, every video I’ve watched is really clear and educational. I’ve been a professional chef for 20 years and have always loved American style bbq cooking. Thank you.
Honestly, I come here right after I watch Young Sheldon remember his Meemaw brisket secret recipe lol!

I followed your instructions and it was my best brisket I've made to date. Keep it coming, i'm ready to bbq more. How about rack of lamb?
Chef Tom’s carving knife is a whole new mood. 😍
Watching from Philippines! 🇵🇭 🇵🇭
Great looking Texas style brisket Tom. The meat that I cook on my Wichita is better than most BBQ places here in Central Texas, so I know that brisket tasted excellent. That rub had some really nice color. I could almost smell that brisket cooking!
First off, thanks! We've had brisket at all the big restaurants, and none of them were this good when we had them. It does help that we were only cooking a single brisket so we could pay attention to it, but still... also, this rub is ridiculous. It goes on all our beef cuts now! Thanks for watching brother!
T-ROY COOKS let me be the judge of that. send some to Aggieland so I can get a taste.
T-ROY COOKS i watched that one t roy . subbed your channel coz i like it a lot .
T-Roy has a great channel. Seen quite a few recipes from him.

This guy is legit all around. Great video!
Thanks for watching!
Wow, great video. Thanks, Tom, you rock!
Now that's what a brisket is supposed to look like!
Hallsguide Diecast News yes sir,agreed!!
Barbecue in Texas is vastly different region to region. Central Texas barbecue is by far the best and typically only uses kosher salt and coarse ground pepper in a 50/50 mix. There was also no mention of the type of wood used. Oak is the go to and some will even use pecan as well.
Nicholas Fusco Can I use oak and pecan? And what are the best coals to use?
Nicholas Fusco I don’t know about you but I was raised here in Texas to use that same rub as you in a pan to soak in the juices while wrapped in tin foil and smoked over mesquite giving it the best flavor
Nicholas Fusco this is a old comment but do you know how panhandle bbq is I’m interested in that region
Agreed! Texas is a big state and depending on where you are depends on how it's done. I'm from Houston and we use mostly mesquite. The type of wood was dependent on the type of trees in the area. That's why central Texas uses Postoak, western Texas you'll find mostly hickory. So all these people saying that Tom's Texas style brisket is not Texas is just flat wrong. Thanks Nicholas for pointing that out!
who cares
Finally a well done meat on the internet
Salute to chef
round steve where did he say it was a steak. Dipshit. You think brisket isn’t meat?
round steve omg you fucking moron learn to read
His original comment says meat. You out of nowhere say it’s not steak. He didn’t say steak. I didn’t say steak. YOU are the one who introduced steak into the conversation. It’s not hard to read man, if you need help just lmk I can try and improve your horrible reading comprehension skills
@@dahliahb.7111 plus some Morons are agreeing with him meanwhile no one mentioned steak except him

That looks amazing. I'd have to take a day off for a 13 hour cooking.
Sometimes a day off just cooking and relaxing is exactly what we all need.

That looked absolutely delicious. Can't wait to throw my next brisket on! Smoke on 👉💨

I must have watched at least 30 different brisket videos
No ones brisket looks better then this one!!!
This looks awesome. I'm in Dallas so this brisket looks right!. I smoked a brisket this weekend and it turned out very similar. I don't get the whole "sauce on brisket for competition" thing. Sauce is for pork! Salt/pepper/garlic only on a brisket and let the smoke roll!
That knife skillz soooooo satisfying to watch a
Hell yeah, good job!
Yea

Jonathan Selaya Depends on where. Houston Texas sucks
well, I've seen some videos on RUclips, and they always mention Texas but not the specific place, thanks for the info
Jonathan Selaya go to Austin or Dallas.
Jonathan Selaya go to Austin they have the best brisket
Shakin' like Jell-o! You know that's tender.
Exactly, thanks for watching!
Maganda Araw!
I'm Philippines I love your channel.
My rub for my BBQ is salt, black pepper, Garlic paste and a little sugar.
Just a common recipe.
This is so satisfying
im from brooklyn so by no means am i an expert on brisket but shouldn't it have more bark or is that sort of a preference when making briset? most briskets I've seen look more charred on top or whatever the correct terminology is
Yes, yes it should. He didn't get near the amount of smoke most reputable TX BBQ joints achieve.
It was fine imo. I could have gone for maybe a little darker, but I find a lot of people have a bark that is way too dark because of an overfilled and choked off fire box that doesn't really burn clean.
Yum! If I had the money, I'd move to Texas for the barbecue😋 and H•E•B. Here in Virginia, it's all about pork barbecue 😖
H-E-B is the best
Try marinating pork in old fashioned root beer. No joke!!! Just ad a can of A&W to some ribs, pork butt, or even pork loin. The first time I did it , it blew my mind!
good lord. that looks tasty
Thanks for watching!
Who? You moms?
Thank you so much, my family are brisket fans. Looks delicious and just wish we could try it.
This video never gets old! Great cook👍🏾
i shouldn't of watched this video now im fuckin hungry
Haha!
ME TOO!
I shouldn't have either.

Why do you have to be so nasty mouth.? I think I set by your family at a restaurant and requested to moved.
CAN YOU GUYS DO MORE VIDEOS USING THE OFFSET SMOKER?
We will do more videos on the offset for sure, thanks for watching!
in England our idea of barbecue is to burn it on the outside an have it raw in the middle lol. love American bbq 😀
Sounds like Australian BBQ too... Nothing like a good burnt sausage 😂👌
Yup, smart price sausages, pre made burgers full of gristle and god knows what for fillers and chicken that's pre marinated in the same boring old Chinese style rub, if they're feeling adventurous some un seasoned pork chops and braising steak.
Everything grilled straight over paraffin soaked instant light charcoal within 2 minutes of lighting it because "real smoke barbecue flavour" and burgers flipped every 30 seconds because nothing says "I'm the BBQ master" like making flames.
Serve on Warburton's pre cut rolls because they're the only ones small enough for the pre made burgers that shrunk by 50% when the fat ran out during cooking and cover in ketchup to add some moisture and mask the taste of cremation.
I usually have my invite revoked when I ask "are you having an actual BBQ or are you just gonna set some meat on fire?"
Dave Ovenden You seem fun...
@@levismith9788 I bet he's the heart of the party!
Nah...only in peasant's barbecues........ I cooked a brisket a couple of weeks ago that turned out perfect. There's a 7.5Kg brisket going on at 4AM this Friday for Saturday evening. I just wish that we had the weather to cook outside everyday!
Really enjoy watching your videos. Thank you for putting them together.
Looks great!! I learned alot just by watching this video. Thanks guys
did you ever spray the brisket with apple juice or another liquid during the smoke?
In Alabama, we baste the meat with an equal parts white vinegar and water solution. After removing the meat from the smoker, we submerge it in a pan of homemade sauce, cover it with aluminum foil and put it in the oven for 30 minutes at 500° F. This works for pork ribs too. Just make sure you separate the ribs with a knife before submerging them in sauce.
I know that cow is like god jn my religion but that thing looks so damn good!!

This is the best I’ve ever seen!
I am really happy to see you specially this video 😊. Love from Saudi Arabia 🇸🇦.
Hai
watching this while hungry, why do i do this to myself. . .
I am watching this while fasting.
😣😣😣
How do cows get so fatty when all they eat is grass and hay 😂
Lots of grains!
Barry G The excess sugars in what they eat turn to fat for long-term energy storage.
They eat corn!
Yup, GMO corn.
Although Grass- fed beef is going through a renaissance right now. Most of the US beef is grain finished. GMO too. It fattens them up big time. In fact, the cow is on his way to getting so fat and unhealthy he will soon die. Thats what the feed does to him. (and us) Just before he dies from being fed at the confined industrial Pharm he is butchered. That's the best way to make the beef tasty for our spoiled palettes. Far from green pastures like you would like to think. Its sad, but I gotta tell you, its good tasting.
Sheldon's dad:Why did we not have this technology in our time.
Lol
But thanks to Sheldon, he got the recipe atleast imao
This is the best way to cook for friends and family. I’ve followed this several times and it always work even if you don’t have the best cut. Thanks guys!
Great job!

I agree.
Let's do a texas style brisket folks ...but we're not using salt and pepper ..smh.Leave the texas out if you're not using salt and pepper ...hipsters
Totally...
Very few restaurants in Texas use only salt and pepper. That's a marketing gimmick, but you'll find onion, garlic and other flavors in their rubs + Worcestershire is commonly used as a mop or spritz.
allthingsbbq uh huh
lol everybody got to add their own " secret" ingredient

Love some good Brisket! Good video my friend!
hey saludos desde Mexicali, muy buena receta...
Dude! Fantastic looking brisket brother! I grew up in the big state and this looks spot on my friend!
I work for Hard Eight BBQ based out of Stephenville (though I'm in the DFW area) and we don't do any of this. We throw our brisket on the pit untrimmed and unseasoned and smoke it for eight hours (4/4) over mesquite coals before seasoning with a proprietary blend of onion, salt, pepper and garlic. After that, we wrap in foil and finish with another hour or so before they're pulled to the pit to be trimmed of fat and served. This looks incredible though.
