They provide the natural sweetness that is not too overpowering like refined white sugar, and balance out the savouriness of the chunjang, the black bean paste (a type of fermented wheat paste flavoured with soybean) to give it that iconic Chinatown jajangmyeon flavour that is so ubiquitous in my country.
I thought those stores threw in so much onions cause they wanted to cut cost. I personally like a balance of fragrance from crispy meat, salty/nutiness from the black beans and slight sweetness from the veg.
No wonder why it taste delicious, all that sauce with meat and onion was cooked at once. It was so flavorful and sweet. Even in one slurp you can feel a whole casserole of meat. Jajangmyeon and different kinds of fishcakes was the best food experience during my trip to Seoul

Okay guys it's not all chopped up onions in that box there is cabbage, radish, onion and potato, and that green thing is zucchini. I understand it's difficult to recognise because no ingredients are listed but jajjamyeong (black bean noodles) has all these veggies and some people even add carrots, mushrooms and tofu for vegetarian version. The liquid black stuff is soy sauce and thick one is blackbean paste, he also added sugar and salt at various points. PS. He has one strong hand to shake all that stuff up so easy.. 💪
@ozy I am not going to argue with you, you can see what you want to see, that box @2:02 definitely has things other than onion, there are some greenish and yellowish bits in there which is inside of a cabbage, I see radish, I can't recognise potatoes probably because it's all chopped in similar size together or there are no potatoes.
I’ve had that dish in Korea but in mine they replaced some of those onions with potatoes and a bit of carrot. And the noodles were slightly thicker. Good stuff.
Everytime i watch korean novela, and there eating jajamyang or black bean noddles it's crave me alot i want a piece of this someday. I wish there a black bean noddles here in the philippines.
At this rate with the pandemic, I would suggest you to just watch a recipe ans try it yourself at home. It looks pretty easy considering most of the work comes in a jar lol.
I want to get some so badly, it’s comfort food for South Koreans. I just know the flavor is so good because of the ingredients used in the sauce, noodles are chewy. And even though it’s hard to make it look appetizing visually, means it’s more appetizing physically when you eat it! My sister & I only had the instant version but it is not the real deal.
