You leave the bottom layer in the bottle when you "decant" the wine (you carefully pour into cups ensuring to get as little as the yeast layer as possible). Otherwise cheese cloth or some sort of micron filter system but for the average person, you just leave the dregs in the bottom of the bottle. I think you can reuse the yeast if you have another brew ready to go pretty soon after decanting but I'm not totally sure.
Nice presentation! But I have a doubt. Some people said airlock is necessary during fermentation. But your video shows that there is no airlock device. It seems you didn't use any airlock. Should I use airlock or it will be ok without any airlock.

It took more than 7 days and still Co2 gas is releasing. That means fermentation is still occurring. I would like to know is everything going ok or not because it already 7 days completed.

U also follow a different process of a lid closed for 7 days , no stirring and then another 21 days after one strain. As different from other standard process we see using a jar with airlock etc. Is there a reason for this or is it the Indian way of wine making?
I stirred grape wine daily as per instructions given to me . As nowadays I notice the available ceramic jars are glazed on the inside , I avoid them because I'm not sure if they are safe to use. I've never used airlocks because I couldn't get them .... this was long ago .
It all depends on the yeast you use and amount of sugar. You can buy something like wine yeast to actually make it reach around 10%. Normal Yeast cannot take much concentration of alcohol. If you really want a specific percentage of alcohol, then you have to start measuring denisty of concentrate before you release the yeast, then add in the required amount of sugar to expect the specific percentage of alcohol, assuming you yeast will survive the alcohol concentration till then. If it survives, then you will get a bitter taste. If it does not, then you get a sugary wine. Another thing, just to make sure the yeast is dead, people sometimes put in fridge for a while. It would be better if you dont get too much yeast in your body.

I have the same problem, the wine came out very bitter I followed the whole recipe correctly to the point. After straining it looked milky, I thought it was supposed to be somewhat clearlooking
I followed the recipe mostly but made a few changes. While fermenting I added a tablespoon of sugar every alternate day. Strained and bottled in 8 days Inspite of straining the wine continued to ferment and all the bottle tops were blown off. Luckily, I had kept the bottles in my ice box. After three weeks strained and added the caramelised sugar. Stored again and now tasted it after 2 months. The wine is awesome, spicy and sweet. The aroma and taste is ginger and very subtle hint of raisins.
Can we not drink this after 7 days? I had thought this is like other wines and must be aged. My batch is 15 days old now and is very bitter. Is it still edible?

Hi, How do you strain the yeast properly? Have strained it, yet yeast remains like a layer in the bottom!

Using plastic lid is no problem. Ceramic jar or glass jar is perfect. Air tight is needed for proper fermentation. Use normal sugar.

This is only Indian way of making. Just give a try with grapes.
