Doesnt the milk need to be hot before you froth it? Whenever I frothed it first and then dipped the wand to create a vortex I would never get any microfoam

Have you tried almond, oat or even coconut milk as they are dairy free. And coffee shops will usually have those. None of these milks will however froth as well as dairy as it contains more fat which makes the texture and flavor.

What's the perfect sizes in ml's for espresso and milk? I use 18g for dose and 36g for espresso but when I make a "grande" size latte the coffee gets lost in the milk flavour
i try to do mine but grind coffee what setting between medium to low in the middle or low or course can anyone give me advice because when i make my coffee i ground the coffee then level out with my prongs then level it with the leveler then tamp gently then puck then machine but then when it goes comes out all crazy and spirty all over the place i have a barista machine i dont know where i am going wrong am i putting to much coffee in got the course wrong tamping it to heavy or light i dont know can anyone help pleaseee.❤

Coffee people are such annoying snobs. I’ve got an espresso machine at home and you don’t need a 12 step ritual just to make a shot of espresso. Grind the beans, tamp it, push espresso button, steam milk. That’s it. Why does every coffee channel have like 25 tools they run their espresso grounds through before they actually pull the shot of espresso?
Because you fell for the crema marketing. In the early days of espresso, people were suspicious of the crema, so it was heavily marketed to tout how it's a sign of good coffee. But this is just stupid. It's carbon dioxide and surfactants. It doesn't improve the flavor, it actually slightly degrades it. Stir it in or scoop it off for better espresso. Modern espresso is moving away from crema as more people are experimenting with lower pressures (6 bar) and coarser grinds for better tasting espresso.
I can't for the life of me find a video of someone going into real depth about any of these steps, like how exactly do you pour the steamed milk to make the shapes?

Spray water on your beans before grinding so it is softer and easier for the machine to grind

As someone who worked in an Italian restaurant/ coffee shop, we don’t even come close to the amount of steps he uses when we made espresso
