For greens at Christmas dinner I always cook frozen peas because unlike most greens you can't overcook them, so if the times aren't spot on for the rest of the meal or someone distracts me while I'm cooking, which always seems to happen, peas can afford to sit around if necessary. One thing I really dislike is soggy, overlooked vegetables and this solves that problem.
