  • 'Once in a lifetime experience' is what my eldest son said immediately when learning of my close encounter with a fawn (white-tailed deer). Considering I thought it was a Big Black Bear by the compounded sounds in the silent woods, I was pleasantly surprised when out came the most adorable sweet little mammal you could ever imagine....a young male white-tailed deer fawn!
    The mother must have left him temporarily, which is common, to forage. He was incredibly cute and it was hard to say goodbye, but maybe our paths will cross again someday!
    We are so incredibly lucky with the amount of Oyster Mushrooms we have been able to forage this Spring. They are delicious and full of flavour, very little seasoning is needed! We have ideal growing conditions for Oysters Mushrooms considering we have many fallen dead Aspen trees throughout our land which produce a bounty of mushrooms in both the Spring and Fall.
    Sections of our property are sandy with ideal nesting conditions for turtles! We have seen an abundance of hatched turtle eggs near the water and have come across Blanding's, Snapping and Painted turtles so far this season. The kids find it exciting and love to analyze the shells.
