That couldn’t be further from the truth. Bone is what gives meat so much extra flavor lol - ever heard of bone broth? Any soup has flavor because of bones lol - same idea applies to bone in meat
If your butcher or grocery store isn’t lowering the price of bone in cuts to account for the weight of the bone then you need to find a new place to buy meat

An oven like that in the states isn't too expensive. It would usually be around $500 more than the standard price of a close to high-end oven.
