Your menus are so inspiring! I'm retired, widowed and converting a backyard into all garden. The fruit trees dominate the front yard. My question: since you are giving your land a Sabbath, what about your Greenstalk containers? Will you grow anything in them this year?
I look forward to these every year. :) I hope in the next two years I will be canning as much as y'all do. I started canning a few years ago but now finally have room to garden and raise animals. The first thing I ever canned was chili and chicken. It's still one of my top things to can for convenience. My mom lives 1200 miles away but I've offered to raise some birds for her and can them and if she drives this way, she can take it all there. She taught me how. I just love preserving.

I was wondering if canning the ground beef in broth would help with the taste and texture. It's good to hear Todd say it's better. I read that if you sprinkle 1/3 tsp of baking soda on the ground beef when you are cooking it, that will tenderize and keep it moist. I'm going to try both!! Thank you for all of your great videos!! Your dinner videos are such a great illustration of why the way you can your produce is so great. By making pre done sloppy joe sauce, and canned meats, it's so easy to grab a couple of jars and make a quick and delicious meal! If you just can the base product, you still have to spend the time and ingredients to turn it into something. This way, its ready to go! Love it!
We looooove ghee. It’s so good and has also helped my daughter and I to be more healthy. I spotted that my perennial herbs, asparagus and chives are popping up outside. I squealed 😅 ready for warm weather and long days out in my garden ❤

I live in Sweden and we don't have a tradition of pressure canning and there are no directives from the goverment, so we follow the American recommendations and look for information and inspiration via RUclips.

You should do a question on if your subs put the shells in the egg cartons. I never have done that, but now that people save me egg cartons for all our eggs, I can tell, more people do it than I would have thought.
We only put the shells back if the entire thing, carton and all, was going to the wild west of compost piles, or into a tumbler. Otherwise the cartons needed to stay as clean as possible, imo.
Unfortunately, we’re supposed to get hit with winter that missed us in Jan & Feb for the next 3 weeks. I’m not seeing many budding trees here in PA, but I’ve seen some birds returning. I feed them. Love the birds
I put things on subscribe and save in Amazon when I would like to stock up on something. I usually do every 3 months. That way it’s coming even though I may forget to order. When I have enough, I stop the deliveries.
Funny I haven't made pie since Thanksgiving and I just made a green apply pie, soooo good. I've been trying meal prepping, having a bunch of food almost cooked so it's fast & easy to get meals together. Not sure it makes difference or not, but I'll give it some time, just trying to find my own groove.
I clarified butter, and I canned it. I put it in the pressure canner, brought it up to 10 pounds of pressure turned off the canner, and let it cool. It lasted me 2 years. Time to do it again I think over time I have 10-15 pounds of butter in the freezer. When I have 4 or so that I notice in the fridge I throw one in the freezer.
I'm not a canner but it all amazes me, I have canned 6 jam jars of peach butter 1 time lol... curious as to why not can the sloppy Joe and meat together? I get canning just the beef for other things but would think canning them together would meld the flavors even more?

My hubs and I were talking about worst first date places. Mine, hands down, was a BBQ restaurant. You cannot eat corn on the cob with make up on, with an appropriate amount of butter on the corn, to look good at the end of that meal. 😂

The canned ground beef, Rachel said she wouldn’t can the pasture raised beef you’ll had unless she had to for preservation so what she canned is commercially processed beef. Do you think that has anything to do with your like/dislike? And don’t get me wrong it’s like once you have some amazing steak you want go back to cheap…. Just curious if you have thought about it in that light?
Did you can and cooked the hamburger because it was getting a little old in the freezer? If you cook it, you are precluded from using it for hamburgers, meatballs, or meatloaf. I like to always try to keep some extra fried ground beef or pork in the freezer. Then I can just nuke it and add it to pizza, spaghetti, or chili. Do you find it gets washed-out on flavor when you can it because it has to be submerged in a liquid in the jar?
I have a good one from an old BH&G cookbook that I tweak a bit, but it does call for canned tomato soup. I want to can sloppy joe mix as well. I’ll have to figure that one out.
I canned ground beef for the first time and it wasn't my favorite either. It is too mushy. I also canned chunky ground beef and that is a little better. I tried to make little hamburger patties and they ended up not being very big patties but I definitely like it better than the fine ground beef.
I don’t care for the texture of the ground beef canned either. I have wondered if it would be better if I canned patties and broke then up when opening. Thanks for letting me know!

If you plant to get chicks and raise them, just know that sometimes some of them end up being roosters, depending on where you get them. If you get them at a farm store, there’s more chance of getting roosters instead of hens. Also, sometimes a few of them die. So, you might want to get a couple more than you want to end up with. Last year I raised almost double of the amount I wanted and sold quite a few pullets when they were old enough to start laying(the ones I didn’t want to keep). I think I sold them for $20 each and could have sold twice as many.

My son added about 1/4 tsp accent to a pint of canned beef. The flavor change was unbelievable. I will be trying it in our canned burger.

I cook my burger with onions & garlic, then can it in broth. That’s the only way my husband likes it & only in sauces or BBQ sandwiches.

Yes, but you still need to observe correct head-space. So you're not going to end up with very much meat in the jars.

How does the texture of the canned ground beef compare to cooked ground beef?
It’s much more tender and smaller granules, if that makes sense. Think Taco Bell taco meat texture.
