  • Are you ready for Halloween? These monster cookies are yummy spooky treats for your friends and family. They are soft, chewy and filled with lots of white chocolate chips. I had fun making them with my daughter!

    Ingredients (about 2.5 dozens)
    2.25 cups (310 g) all-purpose flour
    1/2 teaspoon (2 g) baking powder
    1/2 teaspoon (3 g) baking soda
    1 teaspoon (6 g) salt or kosher salt
    1 cup (226 g) unsalted butter (room temperature soft)
    1/2 cup (100 g) sugar
    1 cup (200 g) light brown sugar
    2 large eggs (110 g), room temperature
    2 teaspoons vanilla extract
    3 food coloring (blue, green, red)
    1.5 cups (285 g) white chocolates chips (divide into 3 portions)
    Candy eyeballs (I like Wilton brand)
    Bake in a preheated oven at 350°F (175°C) for 12 min
    NOTE:
    1. Make sure the oven is preheated in the beginning so the internal temperature is 350°F/ 175°C.
    2. Cookie dough can be made in advance and stored in the refrigerator for up to 1-3 days. Make sure to bring the dough out to room temperature (1 hour or more depending on your weather) before baking.
    DIRECTIONS:
    1. Preheat oven at 350°F (175°C).
    2. In a bowl, combine flour, baking powder, baking soda, salt and set aside.
    3. With an electric mixer or a whisk, cream the butter. Add sugar and brown sugar, and beat well until the mixture is combined, for about 2-3 minutes, stopping to scrape the sides of the bowl, if needed.
    4. Add the eggs (one by one) and continue to mix till combined.
    5. Add vanilla extract and stir.
    6. Reduce the mixer to low speed, add the flour and mix until combined.
    7. Divide the dough and add food coloring of your choice. Mix until the color is uniform.
    8. Add chocolates chips to each dough mixture and combine well.
    9. Scoop about 1.5 tablespoons of cookie dough on baking sheets lined with parchment paper and spread them about 2 inches apart.
    10. Bake in a preheated oven at 350°F (175°C) for 12 minutes. Remove from oven and let it cool on baking sheet for 1 min. Add candy eyes to each cookies immediately while the cookies are still soft, pressing them down slightly.
    11. Transfer to a wire rack and let it cool completely. Cookies will harden a bit when cooling.
    12. Serve immediately or stored in an airtight container at room temperature for a few days.
