the horn size responding to environmental factors is cool, never knew that!

Yeah! Lots of male animals' iconic characteristics are like that - honest indicators of fitness. Basically, if a male grows up with enough resources to grow big horns (or big antlers, or a big tail, or bright feathers, etc) then he's probably also really healthy and strong and is able to advertise that fact to the ladies.
