Brandon the mob that attacked you is called the Phantom and they can be easily avoided if you sleep, if you dont sleep in 3 days in a row they will start spawning again. The weapons in the game's version does alot of damage if you dont spam your weapon. Axe + jump is good for critical damage and Sword is good for alot of mobs because of the skill called Sweeping edge that can hit multiple amount of mobs. Hope this help! You can get rid of the phantoms (the blue flying creatures) by sleeping. If you don't sleep for 3 days, they appear. Also, if you put water on a slab, it fills it, which is the reason you didn't know where the water went

You could have just turn the Diamond Blocks into diamonds and craft diamond armor and craft a diamond axe cause axes are stronger than swords
The difference between swords and axes are that
Axes deals more damage and can break/disables your shield for a short time but the axe is slower because it has reload and for the.
Sword it deals the opposite of an axe but its faster and has no reload but it can't disable shields

this flying creature is named phantom he will show up when you wont sleep through 3 days in minecraft. he has ♥ × 10 hearts and is easy to kill in easy & normal difficulty he only deals 2 ♥ hearts of damage in both of those difficulties but in hard only 3 ♥ of damage. i hope that was helpfull :)
