Since you're not aware LcLc
Whenever you buy a duplicate item off a stand, there's a bug in the code which triggers shop owner's "remove" item feature.
So, no, not everyone is buying at the same time at you, the stand makes owner themselves "buy" whenever you buy any of the same multiple items, but as they cannot (i mean, imagine buying ur own items), it removes another similar item from the stand list instead.
The only way around this is to avoid selling duplicates as much as possible.
Since people see you bought their item, they might re-list it if you wait some seconds and see owner run up to the stand :). You can also try to see this yourself (the bug), take any cheap duplicate items and list few on stand, watch the duplicates dissapear haha.
there's now a bug where the item relists and if it's something so many people go after for, a chance someone might not get it even if there's a lot of them.
Like, an example is what I had
Some guy was selling 101 secret key upper halves (these go rarer than the respective keys these days) and then lots of people were there and some people were buying 30 of them, others were buying less you get the point.
And out of the all the stuff that was there, I could have gotten atleast one secret key upper half if not this bug where the item relists.
