uhmm i'd suggest you start in a cold pan, then add your bacon to slowly render out the fat, then cook your onions IN the bacon fat while it infuses its onion flavours to the fat, and THEN cook your veggies last because they cook so fast, and you want them coated in the oniony bacon fat.
