For this loaf, I did an additional expansion score after 5 minutes of baking. Just rescore and then gently lift the "ear".
Edible flag wafers and loaf inspiration are from Kelsey of 3CatsAndAPig on Instagram and Etsy.
Use sourdough discard as an adhesive when loaf is still hot.
If using edible wafers, spritz with water after baking to make the color POP.
Rice flour is used on the top of loaf after spritzing with water.
