Well usually they just ask for a scan of appostile documents but it can vary from one university to another. I would suggest you to ask then if it is possible to send notarised copy of it and if yes then go to an advocate and get you copy notarised and send it rather than sending orignal

In how many days does the embassy contacts the applicant for visa stamping after the visa status is showing granted?
Around a week
After the interview at the embassy do they again ask the student to come back to submit and updated bank statement?
In some cases they may ask you come back again for another interview or to submit documents. It is totally normal.
