How To Make Marshmallow Figures

Recipe:
- egg whites 140g (or albumen 20g+ water 120g)
- sugar 120g
- water 80g
- gelatin 30g
Syrup:
- water 120g
- sugar 100g
- honey (or liquid glucose or invert syrup) 40g
For the powdering use cornstarch.
Description:
1. Put the gelatine into the water to soak for 20 min.
2. Mix egg whites with sugar. Put the bowl with egg whites and sugar on the pan with boiling water (steam bath) and heat stirring to 42-45 C. Then whip the mass to soft peaks.
3. Put water, sugar and honey into the pan. Boil the syrup till it reaches 110-113 C. Pour the hot syrup into the egg whites in a thin trickle while whipping.
4. Put the gelatin into the microwave and melt it for 5-10 seconds at a time until it becomes liquid. After adding the syrup to the meringue, stir in the gelatin, flavoring and whip for another 30-40 seconds.
To keep marshmallow warm, flexible and liquid, heat the oven to 50-60 C and put the bags in it. Also, you can use a microwave, heating the bags for 3-5 seconds in case the mass becomes firm.

perhaps try to buy a marshmallow, subtract the original date from the expiration date, then you'd know? honestly idk
@@lilypie5420 the expiration of homemade marshmallow would be earlier than the store-bought as they use preservatives to keep it from going bad

@@lilypie5420 Homemade marshmallows should last for up to 3 weeks at room temperature. This is what I found online, hope it helps

yes...i saw a lady selling a course where she does exactly that. also, she lays cookie cutters, like trees, on waxed paper dusted with cornstarch, and fills them in, too...

There's no need to cook them after the eggs have been pasteurized.
