Can anyone tell me why Mary uses hot milk? I always was thought to make a white sauce either by combining hot roux and cold milk or cold roux and hot milk but Mary here adds hot milk onto the hot roux (with the leek)

Just made it. Utterly delicious. Didn't bother waiting for the fish to cool before adding the topping, and it made no difference.

I don't think it's right that Mary usually has to do the wash up when she already does all the cooking.
