My Fancy ... 22 times tomatoes. Tomato Spaghetti is the traditional dish of the Campania region, in Southern Italy. When creating this dish, my aim was to create a homeage to it, by serving it in an personal and innovative way. Tomato Spaghetti was originally served with a sauce made from San Marzano tomatoes, a variety bearing the name of the small town where they are grown. One of the most famous scenes in the film Miseria e Nobiltà (a famous Italian film by Totò), Felice Sciosciammocca is seen eating spaghetti (made with San Marzano with his hands, while standing up on the table. This scene has now become a very popular image of Italian food. For my version, I selected 22 different varieties taken from across the Campania region, each with their own distinctive flavour. These tomatoes are seasoned and cooked in a variety of ways. With every mouthful, the flavours will transport you on a journey around the unique and unforgettable Campania.
