Thanks for the video. I’m a Japanese high school student and I used to live in Houston when I was 4-8years old. I remember that I loved Shipley Do-Nuts. My favorite was Kolache and Plain sugar cake. Yesterday I got an Email from an old friend from when I was in Houston and I started to look back on the days in Houston. I will make Kolaches using this videos recipe. Maybe it will help me remember more about the days in Houston.
Thank you for this great recipe. I made the recipe just like the recipe with the potato flour which I had on hand. I used all the dough and made 10 klobasnek rolls. I added green chile, cheddar cheese, and kielbasa sausage pieces. I brushed the tops of my rolls with butter and sprinkled the tops with cheddar cheese. Everything turned out so good!
As a Czech, I appreciate your knowledge between the difference between a kolache and klobasnik.

I remember getting fruit filled kolaches from a small kolache bakery and asked for the sausage kolaches. The owner being Czech, kindly explained to me the difference. 😬 I know I probably didn't pronounce the names correctly but I do remember him explaining it. I will be posting the fruit filled kolaches at some point. My family loves them. 😊

How did you know I've been looking for the perfect recipe. I had a cousin that his in laws had a kolache bakery in Pasadena. They made the best. Not surprising when Texas had a lot of German immigrants around the 1880's.
Until I was 22 and out of college and moved out of Texas, I had no idea kolaches weren't a thing everywhere... I remember looking for one in North Carolina and the lady thought I was speaking Martian... "Ko-latch-ee!!! Where are they?!" "Ko what?," she asked... "Crescent rolls with filling," I screamed...
I just had some from Shipleys donuts and they are the best I’ve ever had especially the country breakfast it has egg cheese and hot sausage wrapped in their soft dough yummy

Those are also kolaches and in central Texas they are all over the place along side these savory ones. Czech immigrants brought both over from Europe but in Texas the term kolache became universal for both the sweet and savory variety.
@@nakita333 it is a mixture you sprinkle on top of your kohlaches, before baking. Pasipka means Sprinkle in Czech. 1 cup sugar 1/2 cup flour 1/2-1 teaspoon cinnamon 2 Tablespoons melted butter

Hi Angelica. Shipleys was my first job lol. I use to have to make the kolaches but the dough was made early in the morning so all I had to do was cut and weigh it and wrap the sausages and cheese. So thankful for you posting this, because I had no idea of the recipe, and we will not be out at the moment going to Shipleys❤️
Back when I was a kid in Houston and Texas in general a kolache was a bohemian desert. And my mom made poppy seed kolaches. And they were totally different than today. But both are wonderful treats. You have one as a meal and yhe other as a desert lol.

Jalapeno and cheese is pretty standard for these, in fact I'm disappointed that the video left those out. Magma chili would be excellent but I can see the moisture preventing the dough from cooking properly/making it soggy, maybe have the Chili as a dip. Also, one of the great things about kolaches (Klobasnek if you're Czech or pedantic) is the quality of sausage used. I would suggest a sausage better than your standard hotdog wiener. Only the most low end, flavorless donut shops would ever use a frankfurter. You can certainly do it justice using a good quality frankfurter but a good breakfast sausage, or a smoked sausage would work better.
I love to use the sweeter douse like these and stuff with bacon cream cheese caramelized onions and top with jalapeno the sweet and spicy with the bacon omg so good
We used to get fresh Kolaches every time we would go to Grandmas, they always had a prune or some other kind of fruit in them. These look almost like a pig in a blanket, I bet they are good. I sure miss my Grandma and her Kolaches.

Can I freeze the dough or the kolaches? I would love to spend a day making a bunch of these and store them for morning toaster oven breakfast, or just pop the dough out on the weekend and make them up fresh. what would you recommend?

The dough looks interesting. Maybe try adding cheese and make it proper. Then you eat it with mustard. Kolaches are delicious. You don’t have to stick with hotdogs; you can use sausage. Try experimenting with meat and cheese types

When i was a lad in the 50'd out neighbor, who was Hungarian,what she called Kolaches,only they were a light pastry with powdered sugar sprinkled on them.....she didn't make them nearly often enough in my opinion as they were dee-lee-shush
Me too, my Polish supervisor used to make Kolaczki as you described a cream cheese cookie dough, filled with jam/jelly, and sprinkled with powered sugar. They are a favorite of mine.
Traditionally yes, but in Texas these are what we call kolaches. Something got lost in translation at some point. Oh, well. They taste amazing. This and breakfast tacos are what Texans eat for breakfast. Side note: most Texas kolaches use sausage instead of beef franks. And there is usually jalapenos in the sausage or next to the sausage. And there is always cheese around the sausage. Good luck making your own!

I believe that the use of the same dough and the difficulty many Texans had in pronouncing Klobasnek lead to both just being referred to as kolaches (unless you are pedantic or Czech, in which case the distinction is still recognized).
Nope They are not the same as a pig in a blanket. Very similar, but not the same. A few key distinctions, pigs in a blanket typically use cocktail wieners or frankfurters, a kolache tends to use a higher quality sausage. Kalaches also use a sweeter, moister, and fluffier dough whereas pigs in a blanket tends to use a biscuit or croissant dough. Lastly, kolaches are closed to keep in all of that lovely lava cheese that the open ended monstrosities known as a pig in a blanket could never do even if it wanted to. Also, A kolache can have a variety of fillings such as ham, brisket, eggs and bacon etc, and there are sweet varieties similar to a danish.
Don't be afraid. I have made home bread since I was probably 10. It's very soothing and like playing with grown up play dough lol all you need to remember about yeast is that it's asleep. What do you want when you wake up? Well if your like me, you still want to be warm, cuddled up cozy but need a sugar fix. Yeast is like that. Any liquid you use to "wake up" the yeast in should be about as warm as the milk you'd test from a babies bottle....warm but not hot that it burns. That's all. Hope you try to use yeast.
I've made rolls like these that normally call for yeast with baking powder, baking soda, or carbonated spring water. So you can always remix the recipes ☺️
